Here's my bakery recipe for homemade English Muffin Bread. I sold a LOT of this bread in my bakery/bistro! Give it a try! It's not hard...really! Just follow my tips. Enjoy! Judi
English Muffin Bread
Makes 2 Loaves
1 lb, 10 oz (5-1/4 cups) bread flour*
4 tsp sugar
1/2 oz ( 4 tsp) RapidRise yeast
2 tsp salt
1/4 tsp baking soda
2 cups milk
1/2 cup water
Cornmeal
In a saucepan, heat milk and water to 120-130F. Place all dry ingredients (including yeast) in a mixer bowl; combine ingredients. Pour warmed milk mixture into mixer bowl with dry ingredients. With a dough hook, beat at low speed until dry ingredients are moistened. Continue beating at low to medium speed for 8 to 10 minutes, until well combined and kneaded. This bread dough is VERY active, so it's OK to form loaves right away. No need to let this dough rest before forming loaves.
Divide dough into 2 equal portions and form each part into a loaf. Place in a loaf pan that has been greased and sprinkled with cornmeal. Spray top of loaves with nonstick spray and sprinkle additional cornmeal on the top of each loaf. Allow bread to rise in an oven proof box (see video link below), or cover with waxed paper then a towel and let rise briefly over an oven that is preheating to 375F.
Check loaves often, as they will rise quickly. Allow to rise about 20 minutes, until doubled, or until an indentation remains after a finger is lightly pressed into the loaf. When ready, bake at 375F for 25 minutes, until loaves are golden. Remove from pans and cool on a wire rack. Enjoy!
* Note: All-purpose flour or a combination of bread and all-purpose flour may be used in this recipe. The more all-purpose flour used, the less "chewiness" the bread will have, but the end product will still be fine. A combination of both types of flour is often what I used at The Spice Rack. jk

This is the BEST bread ! ! Made it today. Very snowy and cold here in Utah, it was the perfect day to bake. The only adjustments I made was more sugar. My husband likes a sweeter bread. It toasts so nice, will make perfect breakfast sandwiches. Looking forward to making more of your recipes. Thanks so much for sharing this recipe.

Thank you SO MUCH Judi for this great recipe! I am an avid baker and bake different type of breads including sourdough one for many years, also sweet yeast breads (I am a bread lover!).I love english muffins and used ATK recipes in the past. It was OK but not great.Yours is GREAT!! I discovered your video a couple days ago and already baked your bread two times.Only changes I made is I added a little sourdough starter. Will try your oatmeal bread next! Thank you very much again. Happy baking!

Hi Sherry! That's an excellent question! I have not used barley flour, so I can only give an "educated guess" on this one. From what I've read, barley flour has less gluten than wheat flour, and that gluten is different than that of wheat. Hence, it won't provide the same rise capacity as does wheat flour. So, if you want to use some barley flour in place of the wheat flour called for in the recipe, I would substitute no more than half of the wheat flour with barley flour. It would take a trial run to see how well it bakes up in a yeast bread for you to determine the best amount of barley flour to use. Again, half would be the most I would use. It may be wise to start with substituting 1/4 of the wheat flour with barley flour and go from there. Sorry I can't be more precise, but I hope this helps :) Thanks for watching and asking :)

Hi Elizabeth! I'm sorry, but I haven't made the bread at high altitude, so I can't say for sure. I assume you would make whatever standard adjustments would be needed when making a yeast bread at high altitude. I've never lived in high altitudes, so I have no personal experience with it. I'm sorry I can't be of more help to you, but I'd rather admit ignorance on this then steer you in the wrong direction. Thank you for watching and asking. I wish I could help more :)

Hi Linda! You can use only all purpose flour if you want. See my note in the description box about that. When using only all purpose flour, the bread will be less chewy and will be very tender, but it should still bake up fine. Thanks for watching! I hope it turns out well for you :)

Hi! Thanks for watching and asking! Honestly, I have made sourdough bread, but have not tried this same recipe using a sourdough cultured starter. So, I really can't promise how it would turn out. It's worth a try as an experiment. Go for it :)

Is this bread recipe made in a high altitude basis?? what would I have to add or take away from it, to make it in sea level altitude?? I could see you're in Iowa

Hi Sharon! Thank you for watching, subscribing and asking your question! Yes, you can use active dry yeast instead of rapid rise yeast. However, as you said, you definitely would need to proof the yeast first before adding it to the recipe, so the procedure would change a bit. Once proofed, I would mix the yeast into the other liquid ingredients that are at the appropriate temperature, then add all the liquid to the combined dry ingredients and proceed from there (mixing, kneading, etc). Hi Tess! That's a good question! I'm assuming you are allergic to corn. If not, other corn products, such as polenta, grits or corn flour could be used. Otherwise, if corn itself is the issue, you could use some flour of choice, or even ground oats. However, any substitute will not give the same results or flavor as cornmeal would. I have not made the recipe with anything other than cornmeal, so I cannot guarantee results. Thanks for watching...I hope this helps :)

What size bread pans are you using, please? If I use all bread flour, what will the results be?

Hi Kimberly! I used 8x5" bread pans. If you look at the recipe in the description box, all bread flour was used in the English muffin bread. So, if you follow the recipe as written, your results should be the same! Thanks for watching and asking :)

@@kimberlyj4538 Sorry for the confusion, Kimberly! In the recipe in the description box under the video, the original recipe calls for all bread flour. I made a note at the bottom of the recipe that you can use a mixture of all-purpose and bread flours. The more bread flour used, the more chewiness the bread will have. The more all-purpose flour you use, the more tender the bread will be. Either way you go, it will be good!

Is the internal temp the same as regular bread? 200?

Hi Sharon! Are you referring to the internal temp when the bread is finished baking? If so, I never took the temps. I tapped it lightly with the handle end of a butter knife. If it sounded hollow, it was done. Also, the color helped to determine if it was cooked...a nice golden brown. I would consider this to be a "regular" bread since it contains wheat flour and yeast. So, if you take the temp to determine if it's done, you should be able to assume this would be the same.Sorry I can't be more precise, but I hope this helps :)

Sorry! All I can say is that bread is delicious and I sold a lot of it in my bakery. It's not as "holey" as regular English muffins. I adjusted the recipe so it would be more like regular bread, but would have the flavor of English muffins.
