മുട്ട റോസ്റ്റ് or Egg roast (Kerala Style) or Nadan Mutta roast, is a dish from the coastal south Indian state of Kerala. Apart from fish and coconuts, Malayalee's love their egg curries too. A quick protein rich choice in the morning for breakfast that not only Keralites but people around the world love. This recipe and method though, is specific to Kerala's culinary practices.
Ingredients:
5 nos - Eggs
1 whole - Garlic chopped
1 small piece of ginger chopped
2 nos - green chilli slits
6 nos - onions sliced
4 Tablespoons - coconut oil
2 springs - Curry leaves
1 no. - Tomato sliced
1/4 Tablespoon - turmeric powder
1/2 Tablespoon - Garam masala
1 1/2 Tablespoons - coriander powder
1/4 Teaspoon - black pepper powder
1/2 Tablespoon - fennel powder
1 1/2 Tablespoons - Kashmiri chilli powder
1 1/2 Tablespoons - coconut oil
1 Teaspoon - mustard seeds
2 nos - dry chillis
1 spring - Curry leaves
2 nos - cardamom powder
1/4 Teaspoon - Kashmiri chilli powder
1 pinch - turmeric powder
1 pinch - sugar (optional)
salt - to taste
