How to Cook (and eat) a Whole Roasted Fish.
Itta Werdiger Roth, known for her witty and humorous stage-performance, demonstrates how to clean, prepare and eat a whole Porgy fish.

Today, Itta takes us on a gastronomical tour through the fine art of eating fish - how to choose, clean, prepare and eat a fresh fish straight from the market.
Itta has a few warnings for when you're preparing fresh fish.
- The fins are sharp, so wear gloves unless you like getting cut.
- While handling your raw fresh fish, be careful of cross-contamination. Anything that touches the raw fish should be washed well before it comes into contact with any other foods - even the fish itself, once it's been cooked.
- One final precaution: Don't choke. There are lots of tiny bones hiding inside a fish. Rather than have your whole fish along side your Starbucks-to-go coffee, pause. Sit down. Take the time. Enjoy!

You will need:
2 whole porgy or similar sized fish 2 lemons
Course ground sea salt or kosher salt Freshly ground pepper
1 small bunch of thyme
2 tbsp olive oil
½ stick of butter
Directions:
• Preheat oven to 400°F
• Rinse each fish through cold water and pat dry with a towel, getting rid of as much moisture possible.
• Score the fish with two diagonal lines and rub sea salt over the front and back of each fish. Place fish on a baking sheet, set aside.
• Slice your lemons into rounds, cut the 1/2 stick of butter into 12 cubes and divide your bunch of thyme evenly.
• Rub each fish with 1 tbsp of olive oil. Stuff the insides of the fish with thyme and lemons. Top each fish with cubes of butter and sprinkle ground pepper and more salt for taste.
• Put fish into the preheated oven and cook for 10 minutes.
• Plate and serve!

My mother used to fry porgies in a cast iron pan, floured, with tons of butter and salt and then fed (toddler) me with perfect boneless bites from her fork. 50 years later I still remember how good that was. And how generous it was that she gave me the best bits.

A great video. I too mam a fan of porgy. I have been frying them but after watching your video I will bake. Looks really easy to do. A side dish of spinach and brwon rice should work well, not to mention some white wine...

Hi and thank you! (You're very brave, eating right through the skin!) Is 10 minutes really enough? Or, do you prefer your fish a bit "rare?" Other sites seem to have indicated more time than that. Thank you, again. (PS I LOVED your SET LIGHTING! It makes you look so much friendlier, and softer, compared to the bright white background.) :)😃

I just made a porgy tonite. Did it in a skara though. Great tasting fish and very inexpensive

Nice seasoning but 10 minutes is not enough even at 400C. Especially all that fat you need 15 - 18 minutes and then take out let cool for 15 mins under foil before serving. Its also easier to eat if you take a bigger cooks knife or to seperate the bones away. And people DO NOT waste the head and bones. Through them into a big pan with some stock and boil for 15 minutes , then strain the bones out to give a fish "tea". Add some veggies, potatoes to the fish stock for a lovely soup.

The monger will sell you a Sea Bream which is a relative of the Porgy for double the price. A bit less bony but very similar taste

Please mask as much of the fish's natural flavors as possible, really brings out the taste and freshness of the fish

If you want to choke on your meal, eat Porgy fish. I ate this for the first time today, and I can honestly sat that only about 20% of this fish is edible. I almost choked twice on the bones and the skin scales, which resemble contact lenses. I do not know why this fish is sold in stores.
