Hello KZfaq Family,
Here is a simple recipe on how to make Lebanese Garlic Sauce called Toum. This is a super strong garlic paste that accompanies with a lot of the middle eastern dishes, especially with chicken. I use it in a lot of my recipes and as a side dish. Use it to rub on a whole chicken with seasonings and roast it, put a tablespoon in you babaganoush, or homous.

How to make Lebanese Garlic Sauce:
Ingredients:
30 cloves of garlic
1 tbsp salt
3 tbsp lemon juice
3 cups of avocado oil or vegetable oil (don’t use extra virgin olive oil it will have a strong taste)

this stuff is great. not just for chicken, we enjoy it even with beef kafta kebabs. literally just dip it with pita bread lol.

Hi, I have tried this few times and it failed before It is finally looking great :). There are 3 things one needs to do correctly, 1-good solid (not soft)Garlic, the fresher the better. 2- add half of the oil very slowly first before adding any Lemon Juice. 3- Make the mixer and the spoon are dry. Another important thing is to leave the sauce after it is done outside of the fridge for an hour or so before covering the container with a towel paper under the lid so it can absorb any moisture before placing it in a fridge. This Recipe is great, thank You.

Extra virgin olive oil does give a strong taste. Use only vegetable oil & avocado oil. I’ve mentioned in my written recipe. Thank you!

Thank you for your kind comment. That’s how it’s supposed to be. People over think it and add unnecessary ingredients to it, like mayo, eggs, potato, yogurt, it’s ridiculous. Lol

Thank you for correcting me on the oil crisis, someone told me olive oil and I screwed up the whole batch. 😭 I wanted to use the avocado oil instead. Thank you, thank you, thank you, now I understand what I was doing wrong. Do i have to cut out the green stem inside the garlic? i noticed u didn't.

When your garlic is older and not fresh it has a steam, and yes if you have the stem remove it so the garlic doesn’t get bitter. Otherwise if it’s super fresh you don’t have to. Avocado oil is just fine. You’re welcome!

I'm sure the Lebanese Fast Foods use cheap vegetable oils. Tastes good anyway. 😊

Yes, you’re supposed to use neutral oils either canola or vegetable. Otherwise it breaks. Those aren’t the greatest oils for use but for this recipe that what you must use. I use vegetable oil.

It could be from your garlic, remove the inside green part from the garlic if you can. Only use neutral oil. This was my first video so I say the oil incorrectly but in the description is my the correct recipe.

How long to keep in fridge ,as I did freeze some doesn’t work when thawed oil come to the top not fluffy

2-3 weeks in refrigerator. Maybe 1 month.

Is this sauce applied to the chicken while roasting or after the chicken is done cooking?

Either way works! But it’s mainly eaten on the side. I’ve rubbed on a whole chicken with other spices and it works beautifully as well. Enjoy!

Garlic taste is more high and strong like chilli

It from your garlic, you can remove the middle green stems to avoid that, and maybe less garlic. I didn’t have that problem.

Is the blender on high or low when you're adding the oil?

@@aakashsuryi9098 I don’t know what your doing wrong but every size of garlic is different. I used large garlics. Everything should be added slow and steady and see as you go and alternating oil and lemon juice.

@@hyefeastla thanks, my garlic were too small so they don't even blend properly. They just stick to the sides. I then realized that I'm using a small quantity of garlic pods for the size of my blender. Also I don't know if I'm supposed to use an actual blender or a food processor

Maybe to much oil or not enough garlic. Every garlic size is different. You have to put oil in slowly until you reach a thick consistency and stop. Keep trying! Practice makes perfect.

Snazz It’s not only how slow you go, my garlics where huge so more garlic. My recipe may vary from the size of the garlic so don’t add more oil or lemon juice, eye ball it. It takes practice! Don’t give up!

I said don’t use “Extra virgin olive” oil, I’ve also written the recipe below the post and I’m using avocado oil or vegetable oil.

@@hyefeastla no, you keep saying to add the “olive oil”... your recipe says avocado or vegetable oil but no mention of the type of olive oil that you’re using in this video. I’m sitting here with 15 students and teachers and everyone is confused as to why you told people not use olive oil but then you go ahead and use it anyway in this video. So if extra virgin olive oil is wrong then which olive oil is right, which olive oil are you using?
