It's summer grilling season and this is one of my favorite dishes to enjoy for a weekend get together. It can be served warm or at room temperature. To turn it into a vegetarian entrée for four, you can toss the corn and apricots together and serve inside the whole portobellos. The recipe there offers a variation with figs instead of apricots - both are delicious! Tutti a Tavola a Mangiare!
