Bharli Vangi is a Maharashtrian-style stuffed brinjal curry created by stuffing small brinjals with a delectable mixture of nuts, seeds, coconut, onions, and spices. These stuffed brinjals are then gently fried over low heat and cooked until tender. The leftover stuffing makes a semi-thick gravy.
Ingredients-
Small Brinjal - 1/2 kg
for stuffing-
Dry coconut grated- 1/2 (50 gm)
Peanuts- 70 gm
Sesame seeds- 2 tbsp (20 gm)
khus khus- 10 gm
Chopped Onion- 1 medium
peeled ginger-1 inch
green chilies- 3
Garlic peeled - 15 pods
chopped coriander- 1 bunch
Salt- 1 tsp
Turmeric powder- 1 tsp
Red chili powder- 3 tsp
Cunin powder- 1 tsp
Coriander powder- 2 tsp
Goda masala- 2 tsp (if it is not available, replace with garam masala)
peanut oil or refined oil- 5 tbsp
jaggery- 1 & 1/2 tsp
Tamarind water /pulp- 7 tbsp
