When Dave Chang was growing up, his mom always made mung-bean pancakes with kimchi, scallion, and pork belly for any celebratory dinner. So, as Dave gears up for the holidays, he's trying to channel her culinary energy into his own version of Korean bindaetteok. Try as he might, he just can't get it to taste exactly the same, but isn't that what makes moms special?

I love watching David because he is so not flashy, instead of music we hear cooking sounds, what it's supposed to sound like while cooking.. And I love hearing him talk about his mom. Clearly he misses her. You can hear how much he does in his voice.

Mung beans are a staple in our region( south India). We make fritters, pancakes, dryfries with vegetables to be eaten with rice, dal like curries, ricedish( pongal , kichdi), sweet rice, soup (charu) etc with mung beans. Mung beans were grown as an intermidaitary crop between rice crops as it requires less water. (my grandpa was afarmer), so luv anything with mung beans.

I haven't made that..I did made cold noodle soup when I was in High School but I forgot the salt.My mom passed away February, 2023.I appreciate hearing these stories that I can connect to being Korean American. Thank you.

My mom is from Hwanghae in the north. I made bindaettoek with gosari, kimchi, mung bean sprots, and pork belly. I love your approach to recreating your mother's recipe. Always loved Sherri's laugh on Ugly Delicious and anywhere else she might have shown up. All the Korean food I've seen on David Chang shows is why I keep a tub of gochujang in the fridge and have even thrown it in molés. Side note - props to not cutting meat on the wood block. The one habit that could make me skip every Rick Bayless video regardless of what hes doing.

The other important element of a nostalgic recipe that cannot be recreated are the other senses that others experienced while eating a revered dish, e.g., the lighting, sounds, temperature, smells and so forth. Like a piece of art, while the creators intent is important, each individuals experience is their own and that is ok.

Great recipe and wonderful tribute to your mother. I spoke to a friend of mine in India who tells me the Indian equivalent is roughly moong dal chilla, popular in many regions but especially in Rajasthan.

In India we make mung bean pancakes with split green lentils which are ground and left to ferment overnight and then combined with shallots green chillies and ginger before frying them up. They are served with green mint coriander chutney

Family favourite dishes have the best memories, my grandmother ( my mums mother in law) didn’t share her recipes, but my mum did she wanted everyone to keep the family traditions and memories going. In saying that it never tastes as good as hers. I asked her once after reading her recipe for plum pudding what was 6 generous tablespoons of brandy was, she just looked at me oddly and said “ oh you know maybe 8 or more” 😊😊😊

Bindaetteok is my favorite dish my mom makes! Her recipe varies too but adding scallions, kimchi, pork, clams, and jalapeños are my favorite

I'm a celiac and I'm delighted to see this is incidentally gluten free (depending on your sourcing of the ingredients and sticking with the Tamari). Incidentally gluten free is usually the best food I can get.

I loved watching your mom ❤. Thank you for sharing her with us. I think that you should call your version “King Baby Pancakes”. That was my favourite moment in Ugly Delicious when you said “that’s not a compliment”😂. My mom passed away in 2020 and there is some of her recipes that have been lost because there’s nobody left from her generation to ask. I keep searching for similar ones online hoping I will be able to recreate them.

Like most mothers, she probably put whatever was readily available that day into the recipe so it did change depending which ingredients she had on hand 😅

My mom makes these nearly the same way. Substitute the onions with mung beans sprouts for that slight crunchy texture. Sometimes she adds rice flour or not. The rice flour helps to hold the shape when frying or works as a filler. Only mung bean mixture will fall apart easily.

A small question though that someone might be able to answer: on an electric griddle there won’t be sides to the drying surface, so will there be less oil used while frying? Won’t that affect the taste? Or have I missed that one can use quite abit of oil on griddles? 🧐

You can also add ground pork, fresh bean sprouts, or fernbrake (if you can’t find that, you can use fresh par-boiled asparagus that you pull apart lengthwise or even string/green beans) to your recipe. I personally like to add ground fresh garlic to my pancakes. I got that from Maangchi years ago. You can use fresh kimchi or fermented kimchi. Some people rinse their fermented kimchi to remove some of the sour taste from the kimchi if it’s older and very fermented. If you use the fermented kimchi and don’t rinse it off, then I highly recommend adding a little bit of sugar to balance the saltiness and sourness from the kimchi. It really comes down to your preferences though. This is a highly subjective and personal recipe.

Omg we make same thing in India Moong dal cheela/dosa ( green mung beans,or yellow husked mung beans) Soak mung beans for four hours....stone grind/ blender coarsely with green/red chillies,shallots,salt ,cumin or pepper optional....ferment for two hours... In the batter mix in finely chopped onion,ginger,coriander leaves...make dosa/pancakes... roast with ghee Optional add rice flour or semolina and grind but only two tsp for dosa to become crisp or manageable while flipping 😊

I wish I had a food my mom or dad shared with me. I don't. We ate kraft mac and cheese and hot dogs and spaghetti and burritos, which were tortillas with refried beans from a can and cheese. She put the food on the table and we ate it. I loved it growing up, but feel weirdly angry when people say everyone has a special food connection with their parents. I don't. But my mom read to me every night, and so I have books that connect us, and my dad was a big band trombone player, so music is a big part of my life because of him. I'm a foodie now, but def wasn't growing up. My food love now comes from watching PBS cooking shows on Saturday morning, before the Food Network existed, and buying won ton soup at the Chinese food place up the street with my saved up pennies, to eat at the playground while reading.

I flew back to CA to visit my family and my mom dragged me to a cooking demonstration given by one of the ladies she was acquainted with to promote a line of sauces, it turned out to be your mom! I’m kicking myself for not taking better notes. I still have some of her sauces in my pantry. Her 빈대떡 was delicious! it was her recipe that turned me back on to mung bean pancakes!

As a talented chef that you are, can’t you just recreate your mom’s dish without a recipe? I very frequently make food that I’ve had in a restaurant and make it as well or even better! I might consult other recipes or read about that particular cuisine to learn about how to handle the ingredients (might you blanch something, what thickener would it be- potato starch, rice flour?) but I can usually make it very satisfactorily.

My recipe is mandu and being old enough to sit around and fold Mandu while grandma would fry them. She apparently couldn't cook a lot and my grandpa doesn't do sesame oil so our food is relatively bland compared to restaurant food. But it's comfort
