I don’t put them on the shelf because I eat them too quickly so it’s really wasted effort. Also I like my pickles cold:)

The asparagus is so good, one of my favorites. That briney taste compliments the natural flavor of the asparagus for sure. Pickled celery!!! Very interesting, I’ve never thought to. I can certainly try it!

Technically they are pickled :3 but yes raw, super crunchy and delicious

does the asparagus come out crunchy or soft? and could I add sugar to the brine to lessen the vinegar bite?

Instead of adding sugar I would just dilute the vinegar more than 50% to reduce the bite. I’m not sure the asparagus would taste as good sweet but experiment as you see fit! They come out nice and crunchy :)

What is the shelf life?

These don’t go on the shelf because they are not canned for preservation. Must be refrigerated, but in the fridge they will last a very long time! At least half a year if you don’t eat them all first :)

@@TheAlrightChef when I make sweet pickles I add macerated raisons and cut the sugar by 75%. Comes out sweet n loaded with iron. Raises my red count but doesn't peek my blood sugar. I realize everyone doesn't have the same health concerns but there is a softer way for those who do. Peace and good eats.
