ITALIAN-STYLE SMOTHERED PORK CHOPS INGREDIENTS:
For the Brine and the Chops:
4 bone-in loin pork chops
3 tbsp dark brown sugar
3 tbsp Kosher salt
1 cup hot tap water
2 cups cool tap water
7 whole peppercorns
1 onion, peeled and cut into thin slices
2 garlic cloves, smashed
3 whole cloves
1 bay leaf
1 tbsp vegetable oil
1 stick of cinnamon
For the Sauce:
2 tbsp olive oil
3 cloves garlic, minced
1 cup chicken stock
1/2 cup sweet cherry peppers, quartered and seeded
1/2 cup hot cherry peppers, quartered and seeded
1/4 cup sweet cherry pepper brine from the bottle
1/4 cup hot cherry pepper brine from the bottle
1/4 cup fresh chopped basil
1/4 cup fresh chopped parsley
1/2 tsp Kosher salt
1/4 tsp black pepper
6 tbsp unsalted butter
