Quick and easy 'Tsuyu' (dip sauce for soba or udon)
Ingredients;
1 sachet of dashi powder
2-3 tablespoons of sake (if you are going to use mirin, please lessen the amount of sugar as mirin is already sweet)
4-5 tablespoons of Japanese soy sauce
2 tablespoons of brown sugar
1/2 teaspoon of salt
20 grams of dried shiitake
( soaked the shiitake in 4-5 cups of water- you will need this broth for making the sauce)
1 and 1/2 stick of spring onion -1/2 sliced into small pieces for garnish
1 stick of spring onion for cooking
* Optional- in this video I used 3 eggplants- you can make this without the eggplants
I also put 150 grams of sliced pork, but you can also use chicken or beef as you like.
**Tips for this sauce- try not to put the soy sauce all at once- as you don't want it too salty or too bland
