Im 61 yrs old and My Mom used to cook that when we were little but she used the Little Jiffy Corn bread box for the topping and in Northern California (Stockton) we called it Enchilada Pie, Instead of the Rotel, my Mom added "The Diced Green Ortega Chili's" the Flavor is really good But yes it is delicious 😊😊 Thank you Mamaw for Cooking one of one of my Childhood meals (Memories) 😊😇🥰

Have trouble picking up my cast iron too, but love cooking with it. I would have to use diced tomatoes without green chilies in it. Can’t do hot spicy foods. Corey I love the way you help your maw maw. You don’t wait to be asked, you just jump in and do things that make it easier .

All of your gifts are so special. You have a wonderful fan base. This recipe looks wonderful. My Granny and my Momma also used to keep foster kids. All of our foster kids remember the wonderful meals that were fixed. I'm sure you cooked wonderful for your foster kids as well, and they sure do remember your cooking. My granny used to make something very similar to this. She called it tamale pie. We did have red chili instead of tomatoes. Remember, where are from Arkansas, Louisiana, and New Mexico. I'm going to have to have this recipe with your tomato recipe instead of red chili.
