Me and my dad make the Norwegian traditional food, Fårikål. From making to eating. Hope you enjoy it, and be nice to my dad in the comments :D he was very helpful :D
Hey all Norwegian learners!
The language I'm teaching is not Bokmål nor Nynorsk. It's an east dialect and I don't think you will have much problem with bokmål after this. :) And everyone will understand this.
I am Norwegian, from Norway. Born and raised. I live in Oslo, with my husband and son.

For reference, adult sheep meat is called _mutton_ in English. The word comes from the French _mouton,_ which means _sheep._

My first generation Norwegian-American mother made this in the oven. I think she started it on top of the stove, then sealed it up in aluminum foil and let it cook in the oven for several hours. Yummy!

Our church in Virginia hosts a Scandinavian dinner every December. I have never prepared (or eaten much!) Scandinavian food, so hearing from real Norwegians about Fårikål is wonderful! Next week, I will cook it myself. Thank you!

That looks delicious. It's simular to Boiled dinner what we have here in the States. We add carrots and potatoes and onions to dish. Very tasty.

Yum. This is very much like what we call a 'boil up', here in NZ. It is a traditional meal for Maori but not a healthy one. Everything goes into the one pot, meat first, cabbage and then potatoes but no flour, salt and pepper. Traditionally we would use pork bones, thats the backbone or beef brisket. Cabbage is an alternative to what we call puha, which is a milk-thistle or watercress. Puha is my favourite and can be foraged along the roadsides and watercress in streams running through farmland but also at the local butcher shop. One other thing we do on occasion, is to put little dough-boys into the pot towards the end of cooking. A very nice addition. I would like to try cooking Farikal because lamb is not normally used for this type of meal, at least not in our household. It sounds delicious. Can you tell me what cut of lamb does your father use?

It’s typically a mix of lamb neck, shoulder and a few other parts I don’t remember. You want pieces with bones and a bit of fat as that will make it flavorful.

I was born and raised in Norway. But live in Utah, USA now. Just went and got some lamb meat to make farikal. What is the significance of adding hot water? I've never done that before.

We, on the Balkans have similar dish called podvarak. Check wiki page if you want to know more. It has a quite resemblance.

For us Americans, you did not mention the cut of meat you use. We don’t have meat already cut up for fårikål. So the cut of lamb would be helpful. Takk.

Pickled herring (sursild in Norwegian) is more common in Sweden, although people do eat it in Norway as well.

In my family we still prefer mutton to lamb, since it's fattier and the flavor is stronger. Also, mutton needs to cook for much longer (I think we cook it for about three hours), so the result is often better, but to each his own :)

September 24th the national fårikål day. Sad for foreigners is that Norwegian lamb are world class. You won't find the same quality elsewhere except maybe in Iceland, the british islands and Denmark. It is said that the quality is determined by the fact that sheep and lambs graze in areas close to the sea, and that grass near the sea provides quality meat. Also boiled cabbage smell like a fart especially for foreigners. Norwegians are used to the smell from boild cabbage. We don't understand the comparasion to the smell from a fart. However foreigners admit that Fårikål taste good. Bon apetit!

im going to be a tad of a partypooper here. there isnt a wrong way of making this dish since people make it differently, but there is a "better" way. the cabbage is supposed to cover the whole bottom of the kettle, and the layer of meat should cover the cabbage layer etc. equal layers of meat and cabbage. between the layers u add salt and pepper. some use ground pepper, some use whole peppers loose or in a small spice-cage. they are un-fun to chew on when u start eating :O reason the cabbage cover the whole bottom is so the meat dont burn. u fill water to about 5 cm under the top layer, and: mix a tablespoon of flour in a jar and shake it. add it to the kettle. why? u wont risk flour dumplings if u make a large pot. boil up and turn down to half heat. twirl, not mix, the pot from time to time so it dont fasten in the bottom. u wont add water since the cabbage and the meat itself will provide any fluid evaporating. adding water will dilute the flavors and u really dont want that. now, using lamb is a new thing created by fancy chefs and people in the citys who isnt familiar to the flavor or use of sheep anymore, and lamb is more or less tasteless in that regard. usually we use meat from adult sheep for this. fårikål with lamb and fårikål with sheeps meat are worlds apart flavorwise. and also the farmers knocks the lambs earlier than people did traditionally, so when i was young, a lamb weighted between 25-30 kilos, whereas now, they are 12-23 kilos. this is because they made it into a "seasonal dish" for some odd reason. anyways: always nice to see good food being made, and i mean no offense in my response. :)

whats the difference of sheep and lam? hmm.. i like that dish very much but now i find out its used the meat of very young sheep? i dont like that idea, that sheeps are killed too young:(. but how i know in shop that meat that i buy is from older sheep?

Sooty haha too bad bud. I run a global NGO with former military ok. We will stop whaling. We already have started and we have blocked the harpoons. Now it's time to Target their licenses, fuel sources and suppliers. Wait until you see what's next in 2018.... Go have a look at your lying Lofoton Media Gang. We surprised the coast guard, whalers and law enforcement. They had a massive delay in response times. We protested and ran off whale meat stands at a market place. Just wait until you see what's next, yes. Just wait... We don't tell what we do always. We are not Sea Shepherd and we are not Greenpeace. We are a new, pain in the ass for the Norwegians. Our campaign will last 5 minutes or 5 years, it's not up to us, it's up to them, the whalers ultimately -IMMCS. We are baiting the whalers and then taking them to court. We are, in other words targeting every aspect of the operation from fuel to harpoons and radar suppliers. Your whaling fleet will feel the largest impact. We have already made some captains lose their licenses, some have given up once we spoke to them. We are even developing a ship that none of your coast guard cutters could catch. Maybe that 72 knot piece of shit fast attack craft, but then they would be pulling military assets away from their Homeland in order to go after anti whaling activists. It doesn't make sense if they were to send any but then again.. That's apart of them being baited into using resources that are not needed. So how will your country defend against Russia? It won't because they will be too busy stopping anti whalers then actually defending their country against Russian military activities. We do have boats... But now... That may change to a massive ship with satellite communications systems and much more. Just wait until you see what's next...

Sooty No, because soon there will be a whale meat shortage... And I don't have the mercury in me like you, so therefore I can actually think, you know. The reply you write is pathetic mate. People like you are what make more problems for the whalers. We have stood down the whalers on land trying to run us over, in fact at one point our crew openly put themselves out there to further bait the whalers. So of course we have to respond to people like you, so that you know writing to me will only ensure the decline of your whaling fleet Is a preemptive act such as scuttling a ship in harbor, which though it will be used to kill whales at some point, is not actively engaged in the practice at the time of attack, really a justified response? We have even considered hiring security officers who have worked with the U.S. Secret Service and Military to defend against an attack by the whalers and physically restrain them without putting our organization at risk. In addition campaign leadership is transferred to behind the scenes NGO's so that they cannot interfere with our actions. In addition we are not Sea Shepherd or Greenpeace in that we don't share our ships names, IMO etc. We also ignore all media requests from Norway until they can accurately report on our organization. This year has been the worst year for the whalers. We can also infiltrate their crew and create crew trust issues. Trust us man, Norwegian isn't getting away this time. Also I don't know how you intend to eat "hvalbiff" when the truck transporting it has flat tires and broken refrigeration. We have even got some stores to stop selling whale meat. This is the most effective campaign anyone has seen and it's about to get a lot more capable in 2019. This is the planned year to essentially "wreak havoc" on the whalers at all fronts. How do you intend to get a whale meat shipment at your local store when protests are blocking unloading from ships, protests are blocking roads. What will you do when trucks have failed cooling systems, flat tires etc. Good luck eating your whale meat because we will ensure its price goes up and make it much harder to transport it throughout the country.

Use salt and peppercorns, and the meat should be dried salted mutton. The flavor is plentiful, though rich instead of spicy
