Ostlands most defining quality is how stubborn it is. It is said that given the chance an ostlander would boil 2 stones into a stew, because any more stones would be a waste of good rock... in that way they are an extension of Kislev.

If this is the case with Ostland, I cant even imagine how hard it will be for Ostermark count to prove the same point...

Ironically, Ostland actually does have unique things compared to Kislev. For one, they favor dark ales over vodka. For another, they're actually the most impoverished province of the Empire, so its people are almost entirely subsistence-level dirt farmers who supplement their food with foraging and hunting. They have their own native population of ogres, with whom they get on decently. Finally, they invented the concept of double-barreled pistols and rifles.

As I remember by Mordheim books, Ostland look like an old giant family country, they have strange alchogol odour, love of nature, giant belly one of reasons why in Ostland there is ogres and they have double barreled pistols and even hunting rifles. I think the same can be said about Nordland and Norsca. Many in the old world (and irl) think nordlanders are just "good" Norscans. This may be because most of the women there have children with Norscan men instead of men of the empire after raids (also known as summer vacations or "Syden ferie" in Norsca).

When Kislev inevitably fights clan Moulder they should get the Dwarves to make them some wooden nut crackers, super effective.

Well there is a justification that there are Kislevites in Ostland and the Empire in general, but it is a dark thing. You all know what happens when they find a male in Kislev that can use the winds of magic? Yeah, the common folks don't have this luxury, but the nobles can send their kids to the College of Magic to spare them the misery. Of course the Ice Witches are salty over this and urge the Tzarina to do something about it.
