Be forewarned.....pickled asparagus is AMAZING!! As many jars as I make of it....it gets eaten up SO quickly! Its one of those things that I also bring along to family gatherings as a special treat to share. Everyone loves it! Enjoy!!

open kettle makes more sense for these tender vegetables. I want to try this .. maybe with pepperoncini since I grew my own.

Thank you, Lorrie! I am most definitely going to try this! I am so done with soggy pickles. I will definitely try this method with some of our asparagus, cukes and green beans this summer for me……or maybe hubby will begin to like pickled food and I will share. But, I am also going to can someone of the asparagus stems that are soft and leftover for soup. Thanks for the idea of putting them in chicken broth. Have you ever tried pressure canning the woody part, dehydrating and then powdering? Just wondered if that might work rather than throwing away the woody part. Sometimes it seems like there can be a lot of length on those woody parts!

I truly feel that this is the very best way to do pickled items....and hope you have great success with it also! I find that canning the stems in chicken broth adds just a wonderful touch of richness and flavor for soup base....at no additional canning time needed. So its a win/win situation. I have never tried to dehydrate and powder, but that would be a great experiment! Our chickens really love kitchen scraps, so I dont mind sharing those tough ends with them. They reward us with so many yummy eggs.....so I reward them with special treats. But for those that do not have chickens, the dehydrating idea is a great one!!

Thanks Lorrie!!!!! I love this and can't wait to try it. I'm hoping to get some asparagus on sale this week for 99 cents a pound. I love this process, NO WATER BATH CANNING OR PC!! So you do exact same recipe and procedure for green beans and cucumbers?

Asparagus is on sale this week 🎉. I’m going to try this and the dry pack method.

I hope you have great success!! I was very honest with the results....even dry pack, they are fully cooked and soft....but taste a lot better then traditional water pack. Pickled is awesome!! Hope you enjoy BOTH!

I know this video is 10 months old, but I have re watched it 8 times, lol. This is How i was brought up Canning with my Granny... My question is, when you put the soft ends in the jar and added Chicken stock for Soup. Did you can it or just put it in the fridge for a further date? Thanks

I process it in my PC so it is shelf stable. I do PC Quarts 40 minutes.

Today, I did two full jars packed and was able to get a third one not so packed. I can’t seem to figure out how to share a picture of them. After 24 hours, do you still take off the band? Thanks again.

Yes. After they are sealed I remove the band even on open kettle canned items.

No. It does not have any preserving factor. It just takes a little bit of the vinegar bite off.

Its a vintage opener called "Pry A Lid".
