The secret to bacon is to bake it. After doing this the first time I will never fry it again. Lay your bacon in a row on aluminum foil and bake at 350 till desired crispness. every slice will come out identical and it will not curl and the grease will not splatter. The aluminum foil makes for easy clean up. I was amazed the first time I did it !!

Absolutely charming. I was married to a wonderful old fashioned woman from rural northern Mississippi for 21 years. She died but boy could she cook. Fantastic bisquets, you name it. On our first few dates I invited her over and cooked dinner for her, usually some weird hamburger helper. On about the 4th date, when I went to go into the kitchen, a funny thing happened. With no words, I found that she was already in the kitchen more or less blocking the entrance. She owned the kitchen after that ha ha . My God, she must have loved me. And, what a SWEET love it was. I miss you Betty.

You will get better texture and a little more flavor if you take the time to make the cream into butter and buttermilk, although you would need to supplement with more buttermilk. Also, if you only have AP flour, add a few tsp of baking powder and 1/2 tsp or so of baking soda. Key is to cut the butter in super cold so it doesn't melt and mix too much into the biscuit dough. A little salt, a tsp or so also helps flavor. Also, when cutting out your biscuits, try to use something thin and sharp enough that you can push straight down and not twist. Will have more consistent rise and better texture at the edges because twisting seals the edges. Don't be afraid to play around with it. Hard to get something that is completely inedible. Even biscuits that don't rise as much or are dryer than intended can be used. Boil or crockpot some bone in chicken, separate, use the broth and a little corn starch to make chicken gravy, then either pour over the biscuits or toss chicken/gravy/biscuits together and simmer for a few to soften them. Once you have your biscuits down, take a couple pounds of breakfast sausage and a large white onion diced small and cook that in a large skillet. Don't drain (if the sausage you get is too lean, add butter, up to a stick), add AP flour in a little at a time till all the grease/butter is absorbed. Continue cooking for a few minutes on medium, then add milk (slowly, stirring constantly till enough is added), salt, and pepper (seasoning to taste). It will need to be loose at first, the liquid part being a little looser than yogurt. Cook until hot and just a little looser than your desired consistency for gravy, stirring frequently. It will thicken as it sits while you are serving. Couple that with the butter/buttermilk biscuits and you will have anyone obsessed with your cooking. It's all trial and error, just have to get in the kitchen and have an open mindset. Calmly and confidently try things out, record everything you make and what went right or wrong so you can adjust for next time.

I am 76 and have been making homemade buttermilk biscuits since I was 15 and took Home Economics in high school. My mom was a wonderful cook but she worked full time as the private secretary to the Vice- President of Public Relations at Bell Helicopter in Ft. Worth so, bless her heart, she didn’t have time to do a lot of home cooking for breakfast…she did on the weekends though. I have always cooked from scratch for my 7 children and my husband. I love cooking, canning, baking…feeding my family the old fashioned way. I love your flour, sugar and cornmeal jars. I also love that you are calm and you don’t have a lot of music! Thank you. I’ve made these biscuits many times now and let me tell you- they are INCREDIBLE. For anyone who is looking for an honest review from someone who has tried these, I can honestly say these are so delicious. I usually make homemade buttermilk biscuits from scratch and you can hardly tell the difference with these. When I have the time and feel like going the extra mile, I’ll do the buttermilk ones, but these two ingredients biscuits are great, company always loves them, and no one will be able to tell how quick and easy they are when they come out hot from the oven, slathered with butter and grape jelly (my favorite way to eat them) 🤤🙏🏻 I hope everyone tries these!

I just learned this, this week, it finally makes sense to me and I put two and two together. If you’re trying to make biscuits and most ask for flour, grease/butter, and buttermilk. One has to remember that there are two things that evolve from Whipping Cream when you churn or beat it: butter and buttermilk. So remember, when you use whipping cream with your flour, it’s like using buttermilk, butter with your flour. Hence why it works so well I suppose. So far, I’ve tried self rising flour versus the regular flour. At this point, I preferred the self rising flour but I will keep on tweaking it to ensure that in a bind, I can use either or and it would taste the same. My grocery store only sells a little wee 2.5 pound bag of self rising, which is very little and I’m always out of it. Will have to check in a different store soon. Thank you!

Oh my…you brought tears to my eyes with the jar biscuit cutter, my Mom used a old can of baking powder cut out on both ends.🥹😢 Out of everything I learned to cook like her, I could not get the biscuits right. There was no real recipe, Mom would just put the ingredients in the bowl & mashed with her fingers until the dough was formed & they always tasted the same, soft, fluffy & warm (like her)🥹. I can’t wait to try your recipe, the last time I made home biscuits my sons took them outside & played baseball with them, the biscuits didn’t break.🤣🤣 We still laugh about that 20+ years later. I can honestly say, in the South, most girls are taught to cook. I found my friends from the North weren’t taught unless the family owed a restaurant or they were the exception to the rule. They were always amazed how we could walk into a kitchen and put a delicious meal on the table when they thought there was nothing to make. I used to hear that often. I think it was our Mother’s way of teaching us survival and not to be wasteful which was learned and passed down through generations. It’s served me well over my lifetime. When times are tight we always seem to eat well. Thank you for your compliment. I love this channel. She’s amazing! A true Southern Cook. There’s always more to be learned. 🇺🇸❤🙏

When I initially came across this video for homemade biscuits saying that it only required 2 ingredients--I was skeptical. Then when Val gave an introduction with "Hey Ya'll"..., she grabbed my attention with her charm and friendliness. I went to the grocery store this morning, bought the two ingredients (I never used heavy whipping cream or self-rising flour before) and made them when I got home. Oh, my gosh! The biscuits turned out wonderfully--light, soft, fluffy, and most of all delicious! When I was 13, I tried making biscuits and they came out like a hard hockey puck and since that time, I had been reluctant and intimidated of trying to make them again. These biscuits are the best I have ever tasted--even better than Flying Biscuits. Thank you for sharing this video--truly amazing!

This is a great recipe for biscuits, or scones, as we call them here in Australia. We have a very similar recipe here, but instead of just using flour and cream, we use flour, cream and lemonade together, and the food acid in the lemonade reacts with the raising agents in the flour, so the biscuits turn out wonderfully light and fluffy. 😋 Anyway, the recipe is as follows: Lemonade Biscuits or Scones: You need: - 410gm of Self - Raising Flour - 1/2 teaspoon salt - 160ml Lemonade/Mineral Water (if you don't want your biscuits to be too sweet, then I recommend using the Mineral Water instead, but they won't be as fluffy and light) - 160ml Whipping Cream - a little milk, for brushing over the biscuits And to serve: you need butter or some really good jam and whipped cream. Method: Preheat your oven to 220 degrees Celsius or 400 degrees Fahrenheit. Line a baking sheet with baking paper/parchment. Sift flour and salt into a large mixing bowl and mix. Pour in the lemonade and cream and mix together gently with a wooden spoon. The dough comes together very quickly. If it feels a little dry, just add a splash more liquid to the mixture. You must treat the dough gently or it can become too tough, so just bring it together and then place the dough on a lightly floured surface and pat it out until it's 1 inch thick. Now, take a biscuit cutter and cut your biscuits as close together as possible, so you don't have to re - roll as much of the dough. Tip: The reason you don't want to create too much left over dough is that you have to re roll and cut it out again. Re formed dough always gets a bit tougher and you don't want tough biscuits! Now place the biscuits on your baking sheet about 1 1/2 inches apart, brush them with some milk and bake - on the middle shelf of the oven - for 12 to 15 minutes, or until golden. Keep the biscuits warm in a clean tea towel until you're ready to serve them. Any leftover biscuits are delicious toasted. Enjoy! Lots of love from Amanda Jones in Australia

My children were soooo impressed! These are wonderful! And not dry like most homemade biscuits are. I home school and so we turned this into a math/economics lesson! In the 60s my Grandma taught me to use high-protein flour, butter, buttermilk, sugar, baking soda, baking powder, and salt. Her "trick" was to coat frozen butter in flour, grate it, keep chilled and combine everything then roll and fold 4 or 5 times, trim the edges and bake in a large cast iron pan... but she cooked everything in cast iron. Fluffy is ok in some things but I like my biscuits to be flaky with lots of layers... more biscuit and less cake.

In Australia, New Zealand and England theses are called scones. A biscuit to us is a cookie and a cookie is also a biscuit. They’re usually served with jam and cream and when served with a cup of tea, it’s the famous Devonshire Tea. I have this exact recipe printed on a tea towel from the CWA - The Country Womens Association of Australia. Regardless of what their regional name is, this lady makes them very well.

In Canada, saltine crackers are called "soda biscuits". Canadians call our U.S. biscuits "tea biscuits". In U.S. grocery stores, round, unseasoned, tasteless dinner rolls are called "old fashioned biscuits", which is a big crock of bullshit. The finest biscuits I ever had were a tad salty and powdery and were called just "biscuits". Those are the one whose recipe is elusive and hard to duplicate. I have one recipe for these but it only works at sea level.

I only now found your station with this biscuit video!! I just love your southern accent, and your sweet ways,.... This is a wonderful video you have made for us to learn how to make these biscuits!! I have watched other people make them, and I just love your relaxed style, way of teaching, and instructions. You really are gifted!! .... And I love that you include the little tricks that are part of the way you do things!! A jar to cut them, your old woodent spoon to stir the dough,.... How you put out the flour, how you store your flour in those huge jars. The way you clean!! Even the way you fry your bacon!! Much aloha to you!! mililani 🌺

I find this extremely heartwarming. I grew up in 2 portions of the south… Mississippi Delta and North Georgia mountains… We ate our homemade biscuits in four different ways… 1) bacon like you did 2) with sausage 3) with cane syrup 4) homemade jam…. My favorite was to use either the bacon or sausage and add a layer of homemade jam… messy but delicious! My next trip to the store will include heavy whipping cream…. PS: My father often added either parmesan cheese or cheddar cheese to the biscuit dough and made cheese biscuits…. They were delicious as well!

Nothing like a wonderful southern cook!!! Just came across your channel, and it brings me back to my childhood with my mother making homemade biscuits!!!! Heck, everything she cooked was from scratch. She was born and raised in Tennessee and was one of the BEST cooks I have ever known. RIP Mama-you taught me well…as I am too an amazing southern cook!!!! Love your accent by the way. Reminds me of my cousins in Knoxville, Tennessee. ♥️

This is what we call scones in the UK. Instead of cream we use full fat milk. We usually use the scones for teatime served with clotted cream and strawberry jam. You can also make cheese flavour scones by adding grated strong cheddar or red Leicester cheese to the dry mix. Fruit scones are made by adding some sugar and dried sultanas to the dry mix.

@@juliaha4934 Just for information, what are called sultanas in the UK are known as golden raisins in the USA. Folks here, in America, probably wouldn't know what sultanas were. I am from the UK, originally, and now make fruit scones with an american ingredient...dried cranberries, which I think are delicious !

Same here in South Africa, we call them scones, served with strawberry jam and whipped cream or fresh strawberries, or grated cheese on top. Otherwise we use grated cheese in the mixture or herbs or even grated biltong (jerky) for a savory scone. Biscuits over here are thin and crispy, crunchy. I love scones, they're so versatile with tea and so yummy! 😋

Yes! Watching her wrestle that bacon with a fork made me both anxious and also grateful that early in my departure from the nest, my mom gifted me w/a pair of scissor tongs just like the ones I grew up with. In my 20's I never grasped the importance of them, but lately I can't seem to cook any meal w/o using them (I'm mortified I'll wash them too much and they'll break in two). They are super handy...especially in removing olive oil coated sides like roasted asparagus, roasted potatoes, sausages, etc., from a cooking dish or toaster oven. Can't wait to try these biscuits.

That don't necessarily make them lay flat, they can always gets curly on the ends and edges. I use my lodge cast iron grill press, let that sit on there for a couple minutes, got from Walmart for 15 bucks. Puts a beautiful sear on meat as well.
