Eating phulkopi'r singara is best described as transcendental experience. Time stops still, and after you are done everything else in life seems to hold little attraction. Now that you have been warned, let us talk about the phulkopi'r shingara itself.
Phulkopi'r shingara means shingara made with cauliflowers. This means that to make this shingara you must use only the best seasonal cauliflowers. In Bengal cauliflowers are in season in winter. The shingara is ubiquitous all over Bengal, yet a proper shingara recipe is surprisingly hard to come by. All of the recipes we have found on the internet or cookbooks are "home-style" and don't taste like the spicy, jhaal (hot) and mildly sweet shingara sold in sweet shops and chop'er dokan (small fried goods shops). We figured out the recipe of the shingara filling around 2010 and since then have been guarding it like a secret. Today we are publishing it for everyone.
Another common problem with most of the shingara recipes on the internet is that the folding technique is not exactly right. The base of the singara actually has a double fold, creating four layers. It is quite difficult to get right, but we found help in KZfaqr Selina Rehman's shingara video. Her video is the only video that shows this technique in a way that is easy to follow. It can be used to fold samosas as well.
This recipe is laborious, no doubt, but if you follow the measures to the T you will have made one of the best shingaras you have had.

আমি এর আগে এরকম সুন্দর ফুলকপির সিঙ্গারা কোথাও খাইনি। Bong eats এই সব থেকে সুন্দর ফুলকপির সিঙ্গারা বানানো দেখলাম আর মনে হচ্ছে যে টাই বেস্ট এর থেকে ভালো দোকানেও পাওয়া যাবে না।

Bengali singara is mild flavourded , smaller in size .It's unique with flavour of peanut and panch foron. If you want you can remove fenugreek seed after frying.But if you avoid it in panch foron you will not get it's amazing aroma.

Recently I have been watching your videos. Not that I'm going to open my own channel neither I'm cooking each of ur recipes to be frank. But of course I do try out some of the many I see . I love ur work, compilation and every small detailing. It's a treat for eyes. Perfect - smooth. And the best thing I like rather love to acknowledge people from where you took the particular thing, giving the credit from where you learn. That's very important. Now a days every now and then people are opening up their channel / blog, but very few people accept this or showcase this they learnt / got Inspired from so n so. Very impressed by not only the singara but also the number of subscribers your channel has garnered in a very short time. With out doing an extensive research its hard to show such flawless presentation.😘😘 Though i live down south and being a non bong i still love to watch and cook learning from your channel. Till yiu guys showed luchi preparation there were just simple pooris made at home however i make luchis 😉now. This was the video that I was waiting for from you guys.. I stay in France and it is impossible to find a proper Kolkata style singara here and I miss it like anything!! I am not a great cook and so normally I don't venture into cooking difficult dishes like this but with your videos I tried fried rice, kosha mangsho, chicken curry, luchi and a lot more and each and every dish was a real hit!! I was surprised that I could do it. Now its time for singara!!!!!!!!! Thanks a lot Bongeats.. And being a pointer, my favorite shop for singara is tasty corner.. :)

The recipes you guys post are fabulous! Just a thought, the longer you leave the shingara in oil, especially when the oil is cool or even just warm, the more they tend to soak oil, the more greasy they would get, which is an absolute turn off. The oil should be heated to an extent where your pastry doesn't stay mellow when lowered, yet doesn't get burnt. Fantastic work! Keep up on the good work and labor of love!

Of course, you can. But the taste will not be of the quintessential Phulkopir Shingara. :)

Yes. Cauliflower is a seasonal addition. Except in winter, other times we use simple potato stuffing only. In addition u can add small fried coconut pieces as well.

ইণ্টালী তে বড় হয়েছি।মৌলালীর মোড়ে বিখ্যাত বাঙালী দোকানের সিঙ্গারা আর হিং এর কচুরীর ঘ্রাণ পেলাম যেন। আমার মেয়েবেলা কে এই ভাবে মনে পরানোর জন্য অনেক অনেক ধন্যবাদ।
