In Argentina we call it "Queso de Chancho" o "Queso de Cerdo". The English translation will be "Pig cheese". Also is made of the head of the pig. I haven't eat one in decades. I haven't see it in the UK where I'm living now. You bring me memories from my childhood.

Wow, I had to watch some of your video's I missed. I knew you did a good job on the sylte when your eyes smiled --- same with the kransekake - which I did write down the recipe. Anyways, Thank you for sharing your cooking - I sure do miss the holidays in Norway!

Nellik is Clove. Cloves contain Eugenol which is another topic, but seeing as how we're on the topic a bit, Eugenol has some preservative qualities. This pork/fat thing basically 'headcheese' but probably with gelatin and not aspic. Aspic was basically gelatin. I'm pretty sure this is the Norwegian version of 'Headcheese'. It has FAR more fat in it, and then the spice is a bit different. I suspect the efforts in historic food preservation is a basis for that.
@TheAccidentalViking2 жыл бұрын
To Clarify: Aspic was the home made version of the commercial gelatin we have now. This 'sylte' was surely made with aspic when his granny or her mother made it. I've had this conversation with Norwegians before and my 'food chemistry' part of my chemistry brain remembers stuff it learned 20 years ago. Sorry.
