I agree. I noticed that too! I precook my chicken before canning soups & stews. No gross stuff floating.

I clean my chicken thoroughly. It comes out clean with no uglies floating at all. It all according to how you clean it.

Thank you for clarifying raw vs cooked chicken. I am about to start canning for the first time. I have watched a ton of videos. I didn't like the look of the scum on the jars. Doing it your way. Canning my first batch of chicken soup using rotisserie chicken (after noticing some of that “ick” raw-packing green chicken chili which wasn’t bad because of all the other ingredients) Here’s hoping the chicken doesn’t turn out too over cooked. Added a few dehydrated peas to this batch as well. I cold packed everything though, couldn’t finish the entire process in one night. 🙏🏼

Did you say cook quarts in the canner for 90 minutes and pints 75 because in this video you confused me when you said 130 minutes also how much water should be in the canner and should the canner have simmering water when you had the jars/ Do the jars have to stay hot before you fill them? The peas and corn if you use frozen do they have to be defrosted?

Raw chicken canned is considered ugly chicken. LOL It taste great but I can my soups with cooked meat because I am making my broth while I am cooking my chicken. I add knots or better than broth while it's cooking.
