Sausage recipe:
Ingredients:
4 kg pork shoulder
3 kg of bone and skinless flank
1 kg neck
2 kg of beef neck
100 g of pressed garlic
4 g marjoram
20 g ground pepper
15-20 g sweet Hungarian peppers
2 dkg of salt per 1 kg of meat
8 g of crushed cumin
1-1.5 l of water
For 10 kg of meat about 12 m of intestines

Какие же вы молодцы!!Давать жизнь старым забытым вещам да не просто на выставку а что бы служили и радовали своих хозяев!!! С огромным удовольствием смотрю ваши выпуски с нетерпением жду новых!! Да))) специи лучше всего растворять в масле)) (оливковом, подсолнечном, конопляном) они ярче раскрывают свой вкус! Kudos for subtitles of white font on black background. As a teen, mid 1950's, I helped my mother make sausage from our own pigs. We smoked the sausages and hams. Wonderful stuff. We had real pork rinds not the puffed up snack of today.

Wonderful video. I enjoyed the restoration, the history lesson, and the sausages. And I really enjoyed the music at the end while you were making the sausages - American country music. It made me think I was watching the hands of my great-grandmothers making the same. Just wonderful! Now I was to visit the great Czech Republic.

As most of french people I like sausages of any sorts : thin, or fat, smoke or natural, with any kind of spicies as pepper, hot or smoked paprika, garlic or onions as well ! You are very lucky to have such tool to do yours sausages by yourself ! Congratulations !
