i tried frying it once when the plantain was at that stage and it came out really dry, and i hate waiting so long for them to over ripen. so im gonna try baking them this way

Is there a way to roast or use fermented plantains? I have read some information on fermented fruits to aid in digestion, but nothing on using plantains.
