We started buying chuck roll at Costco.And we cut our own rib eyes, cut twenty-two of them off of it and we do port loin the same way.

Eye of the round here less than 3 a pound, I do the same thing but cook them in the oven, salt it heavy and wrap it tight and leave in fridge for up to 2 days before seasoning and cooking, so good, a chef taught me that trick. I make pastrami all the time, so much better and cheaper than deli. That roast looks really good.

We season with italian seasoning and cook it sous vide to 135. Pop in the fridge and slice. This makes great Italian Roast Beef.

Instead of rolling the tops use the center part of a plastic bottle, like a litter or next size down, cut off at shoulder at top and cut off the crinkle part at bottom. Use this as a tube to shuttle the food to the bag. I do this when packaging up fresh salmon. Nice part is it’s reusable, just clean and ready to go again.

You inspired me. I went and found a meat slicer on marketplace, bought a chuck roast and 2 packages of chicken breast, smoked them all up today. Waiting for them to chill then trying out my new to me slicer. Thank you and wish me luck I’ve never tried this before.

That roast beef looks so yummy! One way to know how many servings there are per bag is to weigh it as you bag it. Put a piece of parchment paper between the servings.

Hey, Linda! Love to see your videos. This is super! I am so not a fan of deli food because of the carcinogens. I’ve made my own lunch meat for decades. Little hint: if you put your opened bag into a liquid measuring cup it will stand up just fine for you. ❤

Put your meat in a mason jar, then place your bag to cover the jar then flip it over. Your bag will not have juices or food and then seal it. Works great with Ziplock bags too!!! Even stews with sauce... clean edge to seal.

Linda, I seen in older videos that you dry canned ground beef. But then a few years later in your videos started using liquid again. Did the dry canned not hold up over time?

Been smoking meats for lunches for a long time. Turkey is my favorite as it always renders sucha tender juicy meat... Now I wish I could find affordable Beef around here... Beef dip sandwiches are my all time favorites. Now I'm craving it... 🤭 We have the same tricks for vacuum sealing meats. Flip tops, paper towell, clean tops and double seals. I don't feel so alone anymore. lol 😉Love it. ♥
