Same here! I noticed the mayo he uses looks different than the kewpie mayo that Emmy used, I wonder if it is something else.

@@jodileben694 I believe he’s using the kewpie brand, but I think it’s the kewpie sriracha Mayo, while Emmy used the regular kewpie Mayo. Kewpie is a little different than American mayo, because it's made with only egg yolks-not whole eggs-and with rice or apple vinegar and no added salt or sugar. It's bottled in a slim red-and-clear container, with an emblematic baby for its logo. But the real secret to Kewpie's cult-following is a healthy dose of MSG. Momofuku's Chang isn't the only chef to adore Kewpie or its MSG content. Chef Dino Tsaknis of Chicago's Primehouse has sung Kewpie's praises, while Jason Halverson of San Francisco's Stones Throw has said, "Kewpie Mayonnaise is like mayo on crack." Halverson uses it in everything from coleslaws to sandwiches and sauces, he says. And Bravo TV star chef Niki Nakayama says she always keeps Kewpie stocked. But don't worry: Whether you're eating out at a restaurant that loves to use Kewpie or you want to add it to your own refrigerator, this mayo's MSG content isn't nearly as bad for you as you might think. Recent studies have shown that MSG, which is a salt formed from glutamic acid, doesn't cause the symptoms for which it's so often blamed, such as headache, nausea, and even numbness. You're more than likely safe to eat it, especially in small servings. www.foodandwine.com/news/why-chefs-love-kewpie-mayo This is why it looks and tastes different. And the sriracha one, just has sriracha in it and this makes the one he’s using darker. There are many different kewpie flavors of Mayo. Kewpie sriracha Mayo: www.woolworths.com.au/shop/productdetails/18475/kewpie-sriracha-mayo Regular kewpie Mayo: www.amazon.com/Japanese-Kewpie-Mayonnaise-17-64-oz/dp/B0000WKU8K Kewpie wasabi Mayo: www.amazon.com/Kewpie-Wasabi-Mayonnaise-130-g/dp/B07KDS9Z72 Kenko brand is the same as Kewpie, the only thing that’s different is kenko doesn’t contain msg. It has a similar looking bottle design and red cap, but there’s a little dude on the bottle with a chef’s cap on his and not as expensive as Kewpie. I’ve tried both these Mayos and there quite good.

@@asyab.370 Ah yeah, that would make sense if it had sriracha in it. I've tried Kewpie mayo, it honestly reminds me of a slightly less sweet version of Miracle Whip. I'm not a fan of miracle whip and tend to stick with real mayonnaise, but I can see how Kewpie mayo would be good in a ramen like this. I'll have to pick some up next time I'm out, I just worry that I'll buy it and never use it past this ramen dish. LOL
For anyone watching from the USA I should point out the Sapporo miso tastes different when you buy it in Japan vs when you buy the identical looking package in the states. The Japanese one is noticeably better.

I wonder if you could buy the Japanese version of it online?
