I watched my mother wrap Hakka Rice Dumpling (zongzi) since I was a child, and I never learned the Hakka Rice Dumpling method seriously. This time, i have to learn everything and pass on the craftsmanship of my mother.
The Hakka Rice Dumpling (zongzi) in my hometown are quite special. They like to add Magenta Leaf plants to fill in the aroma of the meat zongzi, Have you ever tried this meat zongzi?
Serving: about 52pcs Hakka Rice Dumpling
Ingredients:
2kg white glutinous rice
1.5kg pork belly
400g minced garlic
500g sliced ​​shallots (fried into crispy shallots)
400g Magenta Leaf seedlings
500ml coconut milk
26pcs salted eggs (cut in half)
500g red beans
15pcs shiitake mushrooms (1 cut into 4 pieces)
bamboo leaves
Straw rope
52pcs chestnuts
Seasoning:
dark soy sauce
oyster sauce
2 packets of five spice powder
sugar
Salt
white pepper
practice:
Bamboo leaves and Straw rope (soak in water overnight, cook for 15 minutes, then wash the bamboo leaves and drain)
2kg glutinous rice (washed and soaked in water for 2 hours),
Glutinous rice: Heat a pan, add shallot oil, add glutinous rice, shredded shallots, 1 tablespoon of salt, 500 ml coconut milk, 500 grams of red beans, stir fry the glutinous rice well and remove
Filling:
A) Braised Pork and Mushrooms: (Hot a pan, add cooking oil, add half of the minced garlic and saute until fragrant, add pork and stir well, add 2 tablespoons of dark soy sauce, 2 tablespoons of oyster sauce, 2 packets of five-spice powder, 1 tablespoon of pepper, 2 tablespoons of sugar , add mushrooms and stir fry together, add red shreds
Then add red silk and stir well, add 1 small bowl of water, simmer for 30 minutes, remove and set aside)
B) Chestnuts: (soak the chestnuts in water for half an hour, peel them with a clip, clean them up, add an appropriate amount of water and cook for 20 minutes until the chestnuts become soft)
C) 26 salted egg yolks, cut in half, set aside
Put the wrapped dumplings in a large pot and cook for about 3 hours
Magenta Leaf plants (scientific name: Peristrophe roxburghiana):
In addition to being used as medicine, Magenta Leaf plants can also be processed into some delicacies as dyes. In addition to showing a natural deep red color, it will also have a very special fragrance.
It has the functions of clearing the liver and reducing turbidity, clearing the lungs and relieving cough, dissipating blood stasis, reducing swelling and relieving pain.

Hai Sadhajie.. Makan senang balut Bak Chang susah sedikit ya, tapi tak apa lah, recipu bagus dan sempurna, dan sekeluaga betsatu sekali dalam keluaga Cina dengan hati seronok dan gembira.. Nampak Bak Chang Bantai kebih sedap dan harum kerana recipi sudah tambah Magenta Leaf, ok.. Gd job and always. Progressive to do it.. Hope soo. Kam Sia, thank u!

古晉的客家粽用花生與豬肉,栗子,香菇為內餡。包粽用大香蘭葉,葉片有20吋長,4吋闊。

Dear Shadajie.. Lihat ingredient Bak Chang, purut pun sudah lapar yah.. Bahan terbanyak di dalam, wangi dan harum ,tetapi balut ada ambil masa sedikit.. Jika berjaya, apa pun boleh buat ya makanan yg enak ini.. Ok.. Gd job, try your best makan 5.biji Bak Chang Orang Kek, yg terkenal di Perlis.. Kam Shia. !

我也是客家人,但第一次看过这种粽子,好特别哦,还有你们北马的(梹城对吗?)的客家话也跟我们的有点不一样,很喜欢用‘了‘这字,好有趣’’。谢谢分享
