This recipe is one of the easiest ways to use yellow noodles. You’ll only need a few main ingredients, the yellow noodles, mustard greens and bean sprouts! A simply and delicious vegetarian carbo fix that costs very little to make, hence the name "Economy Noodles". This humble Malaysian dish is fantastic as is, but you can also opt to serve it with some chicken curry or with some pickled green chilies. Fried Economy Noodles
1/2 Portion (400 grams) of Yellow Noodles
2 1/2 Tbsp Peanut or Vegetable Oil
6 Medium Sized Shallots, sliced
4 Cloves Garlic, chopped
250 grams Bean Sprouts/Taugeh
150 Grams Choy Sum/Mustard Green/Sawi
2 Tbsp Light Soy Sauce
2 tsp Oyster sauce
1 1/2 to 2 Tbsp Dark Caramel Soy Sauce
2 tsp Cane Sugar
Sea Salt, to taste
Water, adjust accordingly
