16 ounce block of Velveeta cheese
16 ounce uncooked elbow noodles
4 cups milk
8 ounces cheddar cheese
8 ounces pepper jack cheese
8 ounces of cream cheese
creole seasoning.
Combine ingredients and smoke at 275 for 90 minutes stirring halfway through.

If I'm making this with ribs could I smoke it at 250 and just cook it a little longer? Looks delicious!

Yeah of course. Smoke it till it's not runny and creamy. Try some noodles towards the end and you'll know when it's done.

Most smoked Mac and cheese recipes call to make a rue first (butter, flour salt in a pot till golden, then add all cheeses. IInteresting yours doesn’t have one. Have you tried it with a rue? If so, any noticeable difference?

You don’t really need a roux. A roux just thickens the sauce before you add it to the noodles, but smoking it allows the noodles to be cooked by the milk and melts the cheese at the same. I only make a roux if I’m making Mac and cheese on the stovetop
