Wow, I do freeze my bread and take out and toast what I am going to use and leave the rest in the freezer. I don't eat bread daily though. My uncle told me this a long time ago and he said toasted bread is easier on the stomach, he was the supervisor over nutrition at the hospital he worked in, he is now is 92 years old and in good health. He still drives and does gardening.

Congratulations Joyce!!! My father is 90 but got the Jab due to my evil sister so up until this jab he was very well and driving but now is begining to not remember how to get places. Things he has done forever like playing cards he now suddenly forgets how to play them which has all came on SUDDENLY so IDK I wish he'd of listened to me. Most all of my family took the Jab so I'm sad. 😭 😣🙏❤️

I am a pastry chef, and I learned in school the reason for this: certain starches (especially wheat, potatoes, and rice) go through a structural change called "retrogradation" when cooled, which makes them more rigid (rg also causes staling). Cooling changes the starch molecule's structure, making it "indigestible" or "resistant". This means our bodies cannot break them down as easily, thus they do not contribute to the glycemic spike nearly as much. I'm guessing the Maillard Effect (browning) that happens in the toaster also contributes to them becoming resistant, thus increasing the resistance quotient. Interestingly, retrogradation can be reversed in potatoes and wheat, but not in rice.

That's for this great info, I do this a lot bc I can't eat a loaf of bread in a week so I put it in freezer so it doesn't go mouldy but especially in hot conditions

Great ! Dr. Mandell made some claims, which are awesome, but didn't bother explaining WHY. It's great to give general info in the video, but for me personally quite annoying to not go that extra step and try to explain why. It makes the claim a lot more logical, even belivable also. And especially when explanation is so simple, it would take 20s of the video.Thank you.

@@gr8dvd The frozen bread "only" spiked the glucose to 179mml/l 200 is considered diabetic. If you are a healthy person, great, but if you pre/type 1 or 2 diabetic this kind of crap video can get you into trouble. He's a quack.

I've been diagnosed with diabetes in my late 60's. I freeze my Mello brown seeded loaf, I always toasted straight from freezer and has helped me tremendously. Only read this tonight. Thanks Dr Mandel for confirming. 👍👏

I been freezing bread since the 1980s mainly because I am single and buy 2 to 3 loafs at a time so I don't have to go to the store all the time to buy a loaf of bread. This way the bread stays fresh rather than sit at room temperature and get dried out.. Watching this video I have a Better reason to freeze bread. Thanks 👍😊👏

Read the label. Real bread contains only flour and water & is made not with yeast, but with a Starter made only from flour and water. Numerous videos abound as to the method. Also sold at artisan bakeries.

I actually found this out through trial and error…found that by freezing and toasting that my stomach felt so much better. …thought it was my weird digestion system…so cool to find out it’s a fact and not my weird feeling ! So brilliant, thank you so much for this video and information!. ❤️

As a Korean, our main is not bread but rice. Rice is same like bread :) To drop glucose it is best to serve after reheating frozen cooked rice 😊.

@@eylab1541 I would be cooking an throwing it away. Brown rice can't be cooked in different ways only steamed. We don't eat steam rice. Why would you say that ? You don't have any idea of how I cook rice some many ways and adding some vinegar dose Not change the flavor of any of my recipes. Brown rice would definitely Not work.

But I believe the guy in the video forgot to mention the acrylamide which is formed when the bread is toasted, and some of the vitamins which are destroyed. Not sure which is healthier compared to higher, or lower glycemic index.

We regularly freeze and then toast our bread (most of the time, sometimes make sandwiches without toasting). We've always done it for convenience so thanks for letting us know it's healthier. A little secret I learned years ago is when you buy it take the time to put a fresh clean paper towel on the top of the bread and one on the bottom the reseal the bag. You will find your bread survives freezing much better with no negative effects & also once it's out of the freezer keep the paper towels in place, it will stay fresh longer. @@alexanderkovalyov5211 Eating bad did not cause my diabetes. I'm a LADA, caused by heredity. I've almost never been overweight and my BMI is excellent. This little trick with bread allows me to eat some bread without spiking my glucose dramatically.

How long do you freeze the bread? Do you freeze it for a day then let it thaw and use as needed or thaw what you need at that time? In other words do you need to keep it frozen?

I always freeze and refrigerate my breads, cakes, pastries and other baked goods. Especially during warmer months and whenever I have excessive amounts. I do this in order to prevent it from molding. But it’s nice to know that it’s making these foods a little more healthier too.

Living in rural Ireland & quite a long drive to the nearest village, I freeze my brown seed loaves - when removed from freezer, they are as fresh as the day they were baked. So this is very good news to me, thanks, Doc❣️

I couldn’t figure out why I eat bread A LOT, and I’m still skinny, whereas everyone else in my family who avoids bread like the plague, has always had weight problems. I’ve always frozen and toasted my bread. Every time, all the time. Now it’s starting to make sense 😃 Of course I WALK a lot.

I am single, so the only way I've kept my bread fresh for the past 13 years is by freezing it. This is great information. I always put mine on the iron grill to toast it., so it must be more than 31% reduction! Thank you.

My mother always had a loaf in the freezer and one in the fridge, and would shuffle by the dates. We were poor when I was a kid, but she always made sure we had wheat bread, even if it was the cheapest wheat. It was always a shock when I’d stay with family or friends and their families would just leave bread in a cupboard or tucked away on the counter. I’d examine that package for mold consistently as a kid and remember it always tasting stale and mushy when left out.

Same, I have been trying to lower my carbs so I don't eat as much bread as before, even if it's "keto friendly" bread, which I have in the freezer now, I might eat a couple slices a week, so obviously I need to preserve it, good to know that what little carbs these have might also be lowered even more, by the freezing and toasting.

What a happy coincidence: I’ve been baking my own bread for years, slicing the just-baked loaves, and freezing the slices in ziplock bags just to keep the bread fresh. I did not know that this lowered the glycemic index.

​@@markrush5013 no, not a massive difference. You are confusing titles he holds a D. C. Which is a Doctor of Chiropractic degree; in the US the ability to confer degrees is monitored by the state (sometimes federal) governments and Regional Accreditation Councils. MD's, which is what you are thinking of, are Doctors of Medicine, I hold a PhD (Doctor of Philosophy) all 3 of us. Plus many more are entitled to be called "Doctor" as they are academically awarded degrees from the Graduate School they attended. The confusion is that each of these specialties, must be licensed to practice that specialty. I spent 6 years on a licensing board. established by state law and entitled to grant, amend or revoke licenses (within our specialty) MD's in some states are licensed to practice "Medicine and Surgery", DC's, practice as Chiropractic Physicians, other specialties are Dentists, Veterinarians. Counselors. Psychologists, etc. So, the key to the difference is NOT the term "Doctor" it is the academic preparation and the license one is authorized to practice under. Why? To protect, as much as possible, patients from unqualified practitioners. Each specialist is full competent and permitted to practice in accordance with the terms of their license. I hope this helps understand why different "Doctors" do different types of work. After all, they may be smart, but you don't want a Doctor of Astrophysics (also a PhD) doing brain surgery on you or your loved ones!

Thanks for informing those of us who know eating (white) bread isn't all that healthy - but still do, for various reasons. Those who are more accomplished don't eat any bread of course, but Dr Mandell don't look down on people, but wants to help everyone.

This is crazy but really true. I freeze my sour dough bread And toast to thaw and retoast another time to get a brown toasted texture. Also I am experimenti with Goat cream cheese instead of butter Or olive oil It's truly settling my digestive tract. For me this is a miracle. No White bread. Is the best way. Heal as Dr Mandell is saying. It aligns with Holistic health. Thanks DOC ❤

I've been freezing my bread for years because I don't eat bread everyday. I only eat it when its toasted with breakfast or on a sandwich. Didn't know about these health benefits but I'm glad I've been doing the right thing. Thanks for pointing this out to me.

@@gerrimcgrath6878 that's it. I take two slices out at a time and put the rest back in the freezer. I use the double wrapped bread like Arnold or Petridge farm. I don't know if that helps but it lasts for a good while without tasting freezer burnt.

I have been doing the same with the last few slices of my bread and I always toast it to defrost it. When the date is off I freeze it before it goes green. Now I'm going to freeze the lot as soon as I get it

Sometimes we do the right thing purely by chance! As a senior living alone, I always freeze the bread to keep it fresh. And since I heard, way back in the 70's, that toasted bread is healthier, and happen to prefer the crispness of toast, I always toast the frozen bread. Happy to hear the good news, thank you!

My mother has been freezing bread for years for the same reason and now I do the same. I almost never have white bread, always whole wheat and other multigrain breads. They taste better.

As with many of your viewers, we routinely freeze white bread soon after purchase because we don't eat it very quickly and then toast it after bringing it out of the freezer. Didn't realize we were helping ourselves metabolically by doing this, so that's a plus! Thanks for yet another informative video!

greenbluemonkey: Same here - have always frozen all bread first, then eaten it toasted. With our family, it was always a case of being 'thrifty'.....you buy your week's bread at the supermarket, and freeze it all to make it last until the next time you go shopping. Yes. I bake my own bread rolls, freeze them, then nuke for 30 seconds to thaw. They come out just like fresh baked.

OMG! We’ve been freezing our bread like forever, reason being, it’s as fresh as when you bought it when it’s defrosted. Then we toast it. I have been sharing this idea with friends but no one seems to like the idea of frozen bread! With your video and a doctor’s standpoint, I hope it catches on. Thank you for this, Doc! FYI, we also freeze pizza and toast it in a pan, low heat. It turns out crispy at the bottom, and soft and gooey on top. I hope your followers try it, too!

Agreed on reheating pizza in a frying pan. I’m always careful because it’s very easy to burn the bottom while trying to get the top ingredients warm/hot. So it helps me to zap it in the micro first to get hot all the way through, then a quick spin on the frying pan drives off moisture from the crust for the nice crunch. Good luck all and cheers. !

Same lol. Although sadly sprouted wheat/rye/whatever bread is a scam here, you can add any amount of sprouted flour and the rest normal flour and sell it as sprouted. That's why I buy 100% whole wheat since there is a actual law that requires you to actually have it be whole wheat.

So glad to hear this as I have been doing this for years. I would raid the day-old clearance bakery rack with a healthy sense of lack and then puzzle what to do with it all once I got it home. I started putting it all in the freezer and then toasting it to take the freeze off . So, now I discover that I accidentally turned my guilty pleasure healthier thanks to you!

Thanks, Dr.Mandell for your ratification of being on the right track regarding my bread consumption. My routine with bread is making loaves, slicing them, and freezing them; then, every other day, I eat two slices of bread for breakfast, after defrosting and toasting, in my regular alternation with porridge; always along with a cup of grain coffee and milk.

You could try keto bread or even Walmart has a lower carb lower sugar bread for half the price of keto bread that's what I always eat or toast up. The nutritionist with my diabetes told me to eat 45 to 60 carbs per meal so bread fits in there nicely the low carb bread.

Quick note: My mother and grandmother have been freezing bread for years before using. I didn't know until now that not only does it keep it fresh, but toasting it was still frozen was healthier still for a person on a restricted-glucose diet. I just thought it tasted better! Also, glad to hear some of my favorite breads are >/= whole wheat. Thank you. Kind Regards.

Very edifying, Doc! I live in a small town w/ one store. Can't buy any good breads, fruits or Vegetables. I'm 73 and in good health but I no longer labor under the magical delusion of immortality. My fake hawian bread just went into the freezer! I met a very active 103yo who told me the secret of longevity was, " EAT VERY LITTLE!"

I make my own bread with preferably a mix of different kinds of flours. Every now and then I make a white loaf. ALL my bread goes in the freezer since I am alone and I eat maybe 3 or 4 HALF slices a week. I never knew freezing bread is good, but now I am feeling quite happy that I’ve been doing this for years! Beware! As I say above. Since white bread sets the glycemic benchmark at 100, reducing it to 69 is not as good as we'd hoped. I'm a diabetic who loves bread the most. Damn!

I am 78 & type 2 diabetic with all the classic symptoms, and I purposed 3 weeks ago to wean myself from breads, pastries, and sugar sweets. When I was a young mother, I always froze bread, because it kept longer, and was fresh tasting when thawed and/or toasted. I also used pieces of the frozen bread for my babies to teeth on, because I didn’t trust the safety of the teething rings with cool gel in them. I had tried the teething biscuits, which my babies loved, but they made huge messes. They loved the frozen bread; they could chew on them, numbing and working the soreness out of their gums; and they didn’t make a big mess!!!

I use beefsteak rye seedless, it has 15gms of carbs per slice - but 1 slice is big enough to function as 2 if sliced in half. Now I'm freezing it, then toasting it, and yes, I've seen significant improvement. My rule of thumb: for snacks anything 3 or less grams of carb is okay, less than 7 is good for a meal. Less than 15 if a one time eating event that day. All of that, plus exercise. Get a copy of "Body for Life", then do the upper body weight lifting and adominals once a week - takes 1 hour on a weekend, then do 30 minute cardio 3 times a week. You'll be in good shape in 6 months - 3 months if you follow "Body for Life" routine by the book.

@@vanhuvanhuvese2738 Ummm. . . Maybe more than a month? The longer it's in the freezer more ice will build up. What i do is take the bread out of the bag and scrape ice off the bread and empty the bag, if you don't and just let it thaw you will have soggy bread. Hope this makes sense.

Our bodies make starch too, I read a very long study on Starch intolerance and it wasn’t only consuming starch but also anything that would create starch in your body like high glycemic foods. No one ever talks about it and I think it makes sense that it’s a bigger problem than people realize because you could have serious issues thinking it’s gluten or Crohns and they test you and say nope, but you have a starch intolerance and it’s worse than those two issues. I would definitely want to see more discussions about the body making starch or whatever the response is without directly consuming starch as an ingredient. Interesting.

I have been freezing and then toasting my bread for two years now without knowing this at all. I individually wrap two slices in wax paper and then aluminum foil over the wax paper. If you saw my freezer you’d think I was nuts. I take two slices out of the freezer the night before and have it for breakfast the next morning. I reuse the aluminum foil over and over again as it’s gotten very expensive lately.

When I was growing up we lived in the Country and my mother made batches of white bread, mostly in the winter time. She always put our loaves of bread wrapped up in the freezer for the duration of the winter. When she served it - it was so fresh like the day she made it. I've always frozen my bread and then toasted it as needed, just so I can avoid it turning moldy due to the length of time before I finish it. Glad to see there are other reasons to do so

That is fascinating. I get sick from normal bread to the point where I wondered whether I was sensitive to gluten, but when I fry the bread in olive oil with garlic, it gives me more energy than any other food and I don't get sick. And I always keep the bread I use for that in the freezer. I always thought it had to do something with olive oil or the garlic, but this gives a completely new perspective.

@@akuma4u There is a video out that says to place in refrigerator for at least 12 hrs and they become resistant starches as well. So I have started to cook my rice, pasta and potatoes and refrigerate. Next day we eat it. I find that I feel different as it does not spike my insulin levels as if I eat freshly cooked starches the same day.

@@akuma4u yes just refrigerate. You can warm up in micro, oven whatever... It doesn't revert. It remains a resistant starch (low glycemic starch.) I freeze my rice sometimes if it is too much and just thaw and reheat.

Good Job! Sugar 😫 When you are thawing your bread, if you flip it over a couple of times during the process, it distributes the moisture, preventing staleness on the upper part of the loaf. Then, just keep flipping it once in awhile if it starts to get hard.

I think it's sad that so many people stopped eating bread. Moderation is the key. I've been freezing my bread for many years. I buy different kinds of bread for different uses. I love toast and do enjoy sandwiches too. I grew up on bread and would never eliminate it from my life. I understand some people do have health issues and have to avoid it but most people can have some just as people have been eating bread for centuries. It's a lot healthier than eating many foods people eat today. Cheaper too.

I'm sure you know better. Just freezing and toasting bread will not make it keto. It still has way too many absorbable carbs to be a keto food.

This is MASSIVE if it's true. I actually do toast half the bread I eat with grass fed (no rapeseed oil) pure butter. Preppers are going to love this - many will prolly do a bread run & then freeze - great timesaver.

this is really good info. as a single guy i often freeze bread so it won't get molds but from now on i'll always put fresh bread in the freezer first.

This is fascinating! I’ve always enjoyed my toast from frozen bread as it actually improves the taste and texture. Now I know it’s also better for me too! 🍞

To reduce waste I regularly freeze portions of bread. I'm delighted to hear how much healthier it is and I usually defrost it by toasting it. Brilliant 😃

Yes, I freeze bread to keep it fresh longer. It is good to know that it lowers the glycemic index. I always toast bread too.

Thank you so much for the great knowledge. I am a seafarer and sliced bread are kept in the ships galley freezer. I never thought that this was one of the reasons. I have been doing this also at home for more than a decade now and really appreciate the learning. All the best..

I make cheese and tomato sandwiches while the bread is still frozen. Not only does it make it much easier to butter the bread but it also keeps your sandwiches from getting warm in the summer if you're taking them on a picnic.

This is fascinating. I alway freeze bread as I can’t eat it quick enough to keep from going stale. After freezing I prefer to toast as it is never quit like a fresh unfrozen slice to me. Now I understand why I never seem to have spike after eating my home made sandwiches as opposed to a sandwich shop treat.

Oh Excellent I do freeze my bread and toast it! Found it more helpful for me to freeze quarters because I don’t eat much and ended up throwing the rest of the bread away! Little trick with freezing bread wrap the bread in paper towels! The paper towels absorb the moisture when defrosting! 🌟

Oh yeah, doc! I've been doing that for a long time, freezing bread to keep it out of the mold and toasting it to make it eatable This is so much a natural process.
