"Hey guys, I'm El Cookerino and today I'll show you how to make original Italian and super delicious spaghetti carbonara in just a few minutes. This authentic carbonara recipe consists of only 6 ingredients and doesn't use any cream. With a few tricks, this delicious dish is perfectly creamy.

Ingredients for two servings:
- 200g fatty bacon
- 1 teaspoon of pepper
- 180g spaghetti
- 50g Parmiggano Regiano
- 30g Pecorino Romano
- 3 eggs
Cut the bacon into coarse cubes. Toast the peppercorns in a pan, crush them roughly in a mortar. Fry the bacon over medium heat until the fat is released. Finally, increase the temperature so that the bacon becomes crispy. Place the bacon in a sieve and save the rendered fat. Cook the 180g of spaghetti in slightly salted water according to the instructions on the packaging. Finely grate the Parmiggano Regiano and Pecorino Romano. Separate the 3 eggs and add the egg yolks to the cheese mixture. Add 2/3 of the pepper and mix everything well. Add a ladle of the hot pasta water to the egg-cheese mixture and immediately beat it over a double boiler. Now, while stirring constantly, add the fat from the bacon. Continue beating until a creamy consistency has formed. Add the drained pasta to the sauce while still dripping with water. Add the bacon to the pasta and mix everything well. Serve on plates and garnish with grated cheese and pepper.
Kitchen hack: The mixture must not be heated above 65 degrees Celsius, or else the egg yolk will curdle.
