CHILLI IDLI
Preparation time : 15 minutes
Cooking time : 20-25 minutes
Servings : 2
Ingredients
For Fried Idlis
2 tbsp Corn-starch/Arrowroot powder (कॉर्न स्टार्च या आरारुट)
2 tbsp Refined Flour (मैदा)
½ tsp Vinegar (सिरका)
Salt to taste (नमक स्वादानुसार)
Water (पानी)
4-5 Idlis (इडली)
Oil for frying (तेल तलने के लिए)
For Fried Idlis
2 tbsp Oil (तेल)
1 inch Ginger - chopped (अदरक)
1 clove Garlic - crushed (लहसुन)
1 medium Onion (प्याज़)
1 fresh Green Chilli - chopped (हरी मिर्च)
1½ tbsp Soya Sauce (सोया सॉस)
2 tbsp Tomato Ketchup (टोमेटो केचप)
1 tbsp Red Chilli Sauce (रेड चिली सॉस)
1 medium Capsicum - medium diced (शिमला मिर्च)
Water (पानी)
½ tbsp thick Corn-starch slurry (कॉर्न स्टार्च का लिजाम)
For Garnish
Spring Onion - chopped (प्याज़ पत्ता)
Process
For Fried Idlis
In a bowl add corn-starch / arrowroot, refined flour, vinegar, salt, water and mix everything properly.
Now add the cut idlis one by one in the batter and then deep frying them on medium heat until half done.Remove and keep aside.
One the sauce is almost ready then refry in hot oil until golden brown and crispy.
For Fried Idlis
In a kadai or wok heat oil and add ginger, garlic, onion, green chilli and saute on high heat for a minute.
Now add soya sauce and let it caramelize on high flames for half a minute.
Then add tomato ketchup, red chilli sauce saute once then add capsicum and saute on high flames for a minute.
Add some water, thick corn-starch slurry mix it once then add the fried Idlis and toss them in the sauce properly.
Continue cooking for a minute and then serve it hot in a plate and garnish with spring onion.
