Here is what you'll need!
Makes 1
Ingredients
1-inch thick rib eye steak, 1-2 pounds
2 tablespoons Kosher salt
2 tablespoons freshly ground black pepper
4 tablespoons canola oil
3 tablespoons butter
2 sprigs thyme
2 bunches rosemary
2 cloves garlic, crushed
Preparation
1. Preheat oven to 250°F.
2. Season the steak evenly with the salt and pepper on all sides.
3. Place the steak on a wire rack on top of a baking sheet. Bake for 35 minutes.
4. Heat the canola oil in a skillet or stainless steak pan over high heat until smoking. Sear the steak on one side for 30 seconds, then flip. Immediately, add the butter, thyme, rosemary, and garlic, swirling the pan to melt the butter quickly.
5. Place the herbs and garlic on top of the steak, and push the steak towards the top of the pan. Tilt the pan towards you to pool the butter near the bottom. Using a spoon, continuously scoop the butter over the top of the steak for about 30-45 seconds. This helps not only flavor the steak, but also helps cook the steak faster. If you prefer your steak medium or medium-well, cook your steak longer.
6. To test the doneness of your steak, lightly press the tip of your left index finger to the tip of your left thumb. The fleshy area below the thumb should feel like what rare steak feels like when pressing the surface of the steak. For medium rare steak, touch your middle finger to your thumb and press the area below your thumb. For medium, touch your fourth finger to your thumb. For well done, touch your pinky to your thumb.
7. Rest the steak for 10 minutes on a cutting board. Slice, then serve!

thumb pressing on the index finger uses your muscle the least so the muscly "ball" part of the thumb and index + meduim rare pressing and seeing how hard the muscle is is how hard the steak should be if you press on it

This is fantastic!!! I just made this for Father's Day, used dry rosemary and thyme and garlic powder (all I had on hand), and used butter instead of canola oil. Incredible!

just made this steak it was wonderful. I had three pieces of steak. Two went into our newly bought convection oven/air fryer and one was made in this method. While this took around 45 minutes in total compared to the 15 minutes of the air fryer it was so much more worth it.

I don't know how people are vegan or vegetarians. I love meat so much. Steak is like the epitomy of heaven. Certainly, I am an animal lover. I own a cute little dog and I've previously owned two other dogs and a cat. I honestly probably wouldn't eat a cow I've raised but I would still go to the farmers market to get my hands on a freshly slaughter peice of meat. Some of you might think I'm absolutely cruel but I will definely cherish that meat and eat it all without wasting it. That cow will have a purpose. Anyways, thanks for making me hungry tasty.

I need to try reverse sear. I usually cook my steaks pan seared. But garlic butter is the best flavor to use❤️

Yep, but that is very,very close to medium which for me would be overcooked, i think 20 minutes in the oven at 250 degrees F would be closer to medium rare after searing each side on high for 30 seconds

I tried this today in an oven using convection mode and it turned out almost well done but still a little pink. Then I tried to bake another steak at 105 degrees Celsius with the same cooking time and the result was perfect. It seems like you have to reduce the temp by 15 degrees Celsius if you are shooting for medium rare steak using convection mode. Still a good recipe though!

Ensures a more even color throughout. I usually do it with thicker pieces of steak to save the outer layer from being burned while the inside is still mooing.

I think when u bake then sear, you get a more even cook. and a crispier crust because its done after the sear, and rest

You can probably use vegetable oil but definitely not olive oil. It should never be heated that high and will give your steak a weird taste.

The first time I cooked a steak like this. Can't believe I was missing out on so much. I'll never go to a steak restaurant again. I recommend eating a portion that's not too large to eat so that it doesn't cool down as you finish it up. If it's too big, it'll cool down and you'll lose the enjoyment.
