This was my own rendition of the Dungeons & Dragons Old One Eye Beer.

Recipe for 14L (5 Gallons) - 60 Minute Boil ~ 6.7% ABV:
* 3kg Pilsen Malt (66.7%)
* 500g Rye Malt (11.1%)
* 500g Vienna Malt (11.1%)
* 500g Wheat Malt (11.1%)
* 25g Tettnang (15.5 IBU) @ 60
* 25g Tettnang (7.7 IBU) @ 15
* Teaspoon of Yeast Nutrient @ 15
* Half a Protafloc @ 5
* 20g Sweet Orange Peel @ 5
* 10g Coriander @ Flameout
* 500g Dried Cranberry @ Flameout
* Wyeast 3724 Belgian Saison Yeast
* Mash @ 65C (148F) for 60 minutes
* Boil for 60 minutes.
* Ferment @ 32C for 7 days
OG: 1.063
FG: 1.012
ABV: 6.7%
IBU: 23

I make a cranberry gruit. I've found that you need to boil the cranberries for at least 10 minutes to get any color or flavor from them. For my gruit they go in at 60 minutes left (of 90). Bitter orange works well for Saison, as does blackberry.

That's a much better idea than the route I went down actually, think I was afraid to boil for too long because of pectin haze

Looks and sounds delicious to me Nikita. Saison is great at disguising its ABV, even in the 7% range.

I LOVE Saisons!! Nothing beats it in the summer. Did the 3724 stall on you at all?

Completely agree there! Yeah it did somewhat I forgot to mention and only remembered after I put this up, stalled at like 1030 at 32C, got it down to the FG in the video by shaking the fermenter to get yeast back in circulation, then upped temperature to 35. Tried the same when it got to the FG as it’s a bit high for a saison but no change!

I'm not a huge fan of the "Saison" style but this sounds interesting. I would think that fresh cranberries added to the boil would give you some more of the red colour you're looking for, and some additional tanin tartness from the skins. Maybe even boil them separately then add the jam and skins to the fermenter.

Great vid, thanks! How do you find RIMS control with the inkbird? Considering the brew tank but wondering if I really need a proper PID...

Rims with Inkbird works fine to be honest! Gets a bit tricky with smaller batches since I like to recirculate with a trickle and that slows the rate of wort going through but otherwise works a treat for regular batches! +-0.5C or so

Maybe a cranberry syrup or blend them up in some vodka? Ooohh or glace cherries could do some funky things.. Looks great though, another to add to my list when I get time!

This unsave water story is a myth told all the time. Think about it. In the last few thousand years most people lived in small villages. If water was not healthy to drink literally every spring in Europe must have been dirty and contaminated. Why? There is no pollution like in modern times. (And for shure they weren't pooping into their drinking water. Not even an animal does this.) Water gets unhealthy after horrible disasters but not without any reason. I think people drank beer because it didn't got bad that fast (compared to other drinks), tastes interesting and brought joy into their lives.
