Thanksgiving recipe testing continues! Today I'm trying a recipe from Green Beans Supreme from Better Homes & Gardens All Time Favorite Vegetable Recipes.

GREEN BEANS SUPREME
(Better Homes & Gardens All-Time Favorite Vegetable Recipes, 1977)
1lb green beans OR frozen French-style green beans
1 small onion, thinly sliced
1Tbsp snipped parsley
3Tbsp butter
2Tbsp flour
1/2tsp finely shredded lemon peel
1/2tsp salt
dash of black pepper
1/2c milk
1c dairy sour cream
1/2c shredded American cheese
1/4c bread crumbs
Cut fresh green beans French style and cook in a small amount of boiling salted water for 10 to 12 minutes (OR cook frozen beans as directed on package). Drain. Cook onion and parsley in 2Tbsp of butter til onion is tender. Blend in flour, lemon peel, salt, and pepper. Add milk; cook and stir until thickened and bubbly. Stir in sour cream and cooked beans; heat until bubbly. Spoon into 1 quart casserole. Sprinkle with cheese. Melt remaining butter; toss with bread crumbs and sprinkle atop beans. Broil 4 to 5 inches from heat until cheese melts and crumbs brown, about 1 to 2 minutes. Makes 8 servings.

I worked in publishing for many years. Those BHG cookbooks were all compilation republications of articles in their magazine, same with Southern Living, and many more. People who subscribed to the magazines got the cookbooks at a discount. They sold well in stores and filled the kitchen shelves everywhere. There was rarely any new editorial content, they reprinted the same photos. Often they’d reprint material exactly as it was laid out in the magazine. Imagine if you ripped your favorite sections out of a magazine, and then bound them together. It is also true of decor and gardening books that were published by magazine houses such as Architectural Digest. A revolution in style in all of those areas occurred in 1982 with the arrival of “Entertaining” by Martha Stewart.

I like how quickly this came together. And lemon and parsley are great flavors, but for me, maybe add the lemon juice and a lot more parsley. More onions, too.

This looks very easy, creamy and yummy! The one thing I tell people when they ask me about my making vintage dishes is that they usually all lack some sort of seasoning, so I understand and support your season salt addition!

Thank you for your seasoning support. These recipes never seem to have enough seasoning for me, other than the few exceptions that were SUPER salty (looking at you, Rinktum Ditty Rabbit)!

I really like parsnips roasted in the oven. Your comment got me thinking...what if I go in blindfolded and choose a cookbook at random? I may try this for a video in the new year. Also possibly a bookshelf organization video...goodness knows I need to do that anyway! 😂

🤍🩷🤚🤍 Yes Parsnips ! Skeptical until had the most Wonderfull Autumn Hash " ~ roasted ALL Root Vegetables , Provencal. Very ThanksGivings. As Puree like a Mash Potato , Roasted or a Soup. Maybe like a simple Gourmet Potato Salad with fresh Taragon and a grainy Mustard , My Friends recipe , decades ago RIP🩷😊🤍

These green beans looked tasty!! Yes it’s interesting how they weren’t as big in the seasoning back then. I adore TJs 21 salute! Hope all is well with you Guys Anna ❤️

I really liked how they turned out! Will make again for sure, but with a little more seasoning next time. TJs always gets me with their spice section! I even picked up some of their different blends for stocking stuffers this year. We are doing well, thanks for asking. Although it is snowing here now and the gloomy days outnumber the sunny ones. Missing that mild CA weather...hope you have a Happy Thanksgiving!

Nice! What a good idea to elevate those classic green beans! It's so interesting watching the BH&G book format slowly morph over the years, isn't it?? I like the idea of using a nice seasoned salt in this dish... just a great one Anna!

I knew you'd appreciate the design evolution of the BH&G cookbook! I kinda miss all of the bright colors and kookiness of the early 60s and 70s books, but it was good to see that some of the recipes made their way through multiple decades.

Oh, you don't need Thanksgiving to make this :) Here in the states, it's just when it generally appears the most. It can work all autumn and winter!

Hi, Anna! I enjoy parsnips. I used to eat them at Thanksgiving and Christmas dinners with my British ex-husband’s family. Those Brits loved their parsnips! 🧐 This green bean dish looks quite fabulous. Respectful side note: Please be careful putting your vintage Pyrex under the broiler. I’d hate to see you lose it to thermal shock!

Admittedly I did not put it under the broiler. I decided just to bake it and see how far that got me. It worked out just fine and my Spring Blossom dish lived to see another day, thank goodness!
