Many people associate dumplings with cherries with their childhood, when you climb a tree, collect them, bring them to your grandmother, and she already makes dumplings. Today we will cook them ourselves, because it is quite simple and very tasty. We will make the dough for dumplings with kefir, it will be very tender and elastic. And to the filling of dumplings with cherries I will add a little cinnamon, nutmeg and semolina. The perfect recipe for dumplings with cherries!
Recipe for dumplings with cherries
Portions: 6-8
Preparation time: 25 minutes
Cooking time: 5 minutes
For the dough:
450 g of flour (and additionally for sawing)
250 ml of kefir
1 chicken egg
½ tsp. soda
½ tsp. sugar
½ tsp. salt
For the filling:
400 g pitted cherries
2-3 tbsp. l. sugar
1 st. l. manki
1 pinch of nutmeg
½ tsp. cinnamon
20 g of butter
to taste sour cream (for serving)
1 pinch of salt
How to cook dumplings with cherries
Prepare all the ingredients for making cherry dumplings. Remove the stones from the cherries. You can also buy frozen pitted cherries and just defrost them.
Prepare the dough with kefir.
Measure 450 g of flour and pour into a large bowl, pour 250 ml of yogurt, add ½ tsp. soda, ½ tsp. sugar and ½ tsp. salt.
Beat 1 chicken egg and knead the dough. It should turn out elastic, not stick to your hands and not fall apart during cooking.
Roll out the dough 2-3 millimeters thick on a board or work surface sprinkled with flour. Using a glass, cut out circles in the dough.
In the peeled cherries add 1 tbsp. l. semolina. The semolina will absorb the excess cherry juice, while the dumplings will remain juicy, but the juice will not flow when you eat the dumplings. Also add 1 tbsp. l. sugar, 1 pinch of nutmeg and ½ tsp. cinnamon, stir a little.
Spread some of the filling on one edge of the circle and gently press the other side. Squeeze the edges of the dough well so that the filling does not leak out of the dumpling during cooking. Form dumplings from all circles of dough.
Cook the dumplings in boiling water with a pinch of salt over low heat for about 3-4 minutes after they float. Then put hot dumplings in a bowl, add 20 g of butter, sprinkle a little sugar or powdered sugar. This will add sweetness and will not allow the dumplings to stick together. Add sour cream to taste.
