After watching you I have concluded that Anthony Bourdain is a jaded old depressed person and Mark Weins videos are made to put people to sleep with his song of " oh. oh . oh. oh" that he keeps saying after tasting something and Im sure he has balance issues coz he keeps leaning to the side when he likes something he's eaten. The rice paper in Vietnam although dry, is made fresh unlike the super dried packaged version we get here in the states.

Ricw paper in the old day you have to dip into water. The new kind doesn't need to. The moisture from the food will do the work.
