Mexico holds the title for the absolute best chicken sandwich. This thing is perfectly balanced, and so freaking delicious. Tortas are large and filled to the brim with flavor. This one has a massive chicken cutlet and is topped with salsa, cheese, lettuce, beans (aka, all of the good stuff).

Teleras
300g of warm water
8g active dry yeast
600g ap flour
42g sugar
12g kosher salt
45g oil (canola, veggie, or peanut)
Arbol Salsa
3 Arbols
4 tomatoes
1 garlic clove
Tons of salt
White vinegar - just a splash to taste
2 chicken breasts, butterflied
Salt, pepper, MSG
AP flour to coat chicken
2 eggs
Garlic powder, smoked paprika
200g - 300g Standard breadcrumbs, panko or a combination of both
Beans
1 can of pinto beans
Oil to cook
Salt, pepper, garlic powder, cumin, coriander, oregano, smoked paprika, cayenne
Water to thin texture
Toppings!
Thinly sliced iceberg lettuce
White onion
Avocado
Oaxacan cheese (or mozz if you can't find it)
Mayonesa - Mayo mixed with lime juice
Pickled Jalapenos are good if you have them around

I have never ate nor heard of this mexican dish, the closest thing i can thing of is a fried sandwich called zinger that is regional famous, definitely will try to make it someday inshallah !

Yes, I've seen several places in California have it (I'm in CenCal). It's in a category of Tortas that utilize alternative fillings. Another example of this is Torta Campechana (typically Chorizo+Carnitas) and Torta Guajolota (tamale [yes, really]). I've seen others with sliced links like a Polish sandwich and breaded beef cutlets as well as utilizing slices of soft cheeses like panela.

I've had a torta before. Not comfortable giving away my exact state, but I'll tell you it's in the one of the northern areas. The torta I had was from a local Mexican brunch place- it had carnitas, chihuahua cheese, lime aioli, refried beans, tomato, onion and jalapeño- and yes, it was delicious! Yours looks pretty good too though!
