Mexico holds the title for the absolute best chicken sandwich. This thing is perfectly balanced, and so freaking delicious. Tortas are large and filled to the brim with flavor. This one has a massive chicken cutlet and is topped with salsa, cheese, lettuce, beans (aka, all of the good stuff).

8g active dry yeast
600g ap flour
42g sugar
12g kosher salt
45g oil (canola, veggie, or peanut)
Arbol Salsa
3 Arbols
4 tomatoes
1 garlic clove
Tons of salt
White vinegar - just a splash to taste
2 chicken breasts, butterflied
Salt, pepper, MSG
AP flour to coat chicken
2 eggs
Garlic powder, smoked paprika
200g - 300g Standard breadcrumbs, panko or a combination of both
Beans
1 can of pinto beans
Oil to cook
Salt, pepper, garlic powder, cumin, coriander, oregano, smoked paprika, cayenne
Water to thin texture
Toppings!
Thinly sliced iceberg lettuce
White onion
Avocado
Oaxacan cheese (or mozz if you can't find it)
Mayonesa - Mayo mixed with lime juice
Pickled Jalapenos are good if you have them around
