My butcher doesn't sell the Picanha cut by name, but they DO sell "top sirloin cap", which is the same cut, and by request they trim it to allow 1/3" of fat on top. So if you don't see Picanha at the store where you buy steak, ask the butcher for top sirloin cap instead and tell them to leave some of the fat on it. 👍

@@convincedquaker I was a butcher. It's the same cut, it's from the exact same part of the cow, the only difference is that the fat is usually trimmed off completely when sold as top sirloin cap.

@@Tyshkevich it’s easy to screw up. It’s really lean so if you overcook it it’s really dry and chewy. Cook it to a nice rare or medium rare, let it rest, and eat the meat with the fat together. If it’s not your cup of tea that’s ok, but to me it’s heaven.

There's no wrong way to make Banh Mi, but as a Vietnamese I would like to point out a couple of things: - You want to spread the mayo on the bread first, that would prevent the liquid from the meat and sauce to seep into the bread and make it soggy - Usually in Vietnam we spread a thin layer of liver paté on top of the mayo as well, that would add more richness and sweetness, make the taste much deeper. - If you can stand the smell, add a bit of diced spring onion too, that creates a bit more depth in the taste as well

I'm Vietnamese and I approve this fusion sandwich! Actually, In the north we often use plant based butter or pate as the base. The sweet chili sauce you use is more southern style (and Idk where that soy sauce comes from, probably Chinese)

Guys, it is his take on banh mi. Even then, banh mi is adopted from the French. But the truth is, banh mi is like Subway sandwiches, it can be modified with many different ingredients. We do use beef/steak in out banh mi but not as often because it is more expensive. Angel really is missing out with the vegs

I do not like cucumbers. One of the only foods I have a hard “No” on, but banh mi has cucumbers and I always eat it with cucumbers. You just don’t mess with a dish that is perfect as-is.

So glad my local grocer started carrying picanha. Dry-brined, then reverse seared with an oven and then salt block. The salt block is slightly used, so there is a dip in the middle. The fat pooled in the dip, and I let the fat cap essentially fry in its own oil as the meat seared on dry block. Super tender, super beefy. Only issue was salt level as that oil pool dissolved a little more salt and the end product was a little briney.

Vietnamese food is highly modular. You can have the same basic ingredients with different meats in a sandwich one day, on rice the next, and the next, my favorite, in a vermicelli bowl. You should do your take on bún thịt nướng, which is the non-soup version with meat and veggies on top of cold vermicelli noodles. So refreshing. Obviously, you're going to use steak, but you should also do your take on some deep-fried crispy Vietnamese spring rolls to also put on top, since meat + spring rolls is common and excellent. Don't forget the fish sauce and optional sriracha. Edit: One thing I learned recently when I was too full to finish my dinner was that leaving my leftover bún all mixed up with fish sauce and everything in the fridge and eating it the next day was a revelation. Everything just marinates together, and it's awesome. It was really nice cold out of the fridge, too. Probably going to save have my meal in the future and do that.

One thing about the actual sandwich I like a lot is the pate spread. I grew up loving Liverwurst in SoCal as a kid. I know you can still find packages of it at the store. A great substitute for pate. I also would make liver and onions as a kid, like 10 thru 15 it was common.

Hi Guga ! You always use garlic powder to season your steak, but I was wondering if it would not be better to use other garlic seasoning like fresh garlic, garlic paste or some kind of garlic compound better ? Pickled daikon is honestly delicious. Not a fan of it any other way, but it's really common to find as an appetizer in authentic Chinese restaurants, put out alongside a plate of peanuts on the table when you arrive, to snack on while you decide on your order. Also OMG it's so good that Angel just YOLO'd those vegetables like that no questions asked lmao

Do this with thin sliced meat with fat and toasted crossoint. I learned this from the Vietnamese Bahn min shop. Add some pate and thin sliced jalapeños for a little kick. It is so good.

Guga, have you ever tried Kecap Manis, which is an Indonesian sweet soy sauce. It has really nice flavor, sweet obviously compared to regular soy sauce, and it's nice and pasty, so it may lend itself to dry aging as well. You can find it by ABC brand on Amazon, and that's the kind we use and get really good results too. You can also add it to minced meats before cooking, to add flavor to the end dish.

After watching your videos, I have three requests for future videos: - Please try some other cattle breeds than wagyu and American beef. - How do you clean all your pans and other cooking ustensils so they continue to be so shiny ? - Please cook a foie gras in a terrine using sous vide. Guga my man, just add some compound butter and a good quality paté to it and its pretty much authentic. Also save the steak juice with the banh mi as well. Looking hella fine 😗😘

It's his rebellious nature, his way of expressing independance over his parents or something... maybe he likes to upset the commenters, or he was traumatized as a kid by talking vegetable cartoons... i know I blame Super Mario Bros for not wanting to like mushrooms, cuz I didn't want to eat Toad. Hey Guga , you guys use a lot of different seasoning on Steaks. As an Indian I would suggest you to get some "Garam Masala" and "Pav Bhaji Masala" and use them as seasoning for the steaks.

I’d say it gives a better perspective because it shows that even without the veggies the meal is delicious. If Angel was complaining that it’s too overpowering or something that would be solved by having veggies in there, that would be a different story.

Cool tip is make or buy proper Char siu sauce and use pork for banh mi...the word banh actually means pork in vietnamese and banh mi is pork roll so you can't have banh mi without the pork. Char siu is the sauce that gives the pork red colour, it's a must have

Guga! Have you ever made an anchovy butter? It can add a bit of that funky aged flavor to fresh steak. Anchovy-garlic-parsley-lemon zest butter painted on a smoked ribeye and given the torch! 😛🤯

People who don't eat any veggies at ALL, most likely had a very privileged lifestyle. I myself, had a period where i was poor and starved everyday. Today, even when i am financially secure and can eat 3-5 meals a day no problem, i will still satisfy with Spaghetti with crushed tomatoes. That food is gold to me. Anything edible goes down for me and i am so happy i am like this.

Next time I recommend wrapping the sandwich in butcher paper tightly and letting it rest for a few minutes. It will help combine the flavor more. And as others have said, steak is used in Banh Mi sometimes.

I love steak, but I don't think it would beat the roast pork belly with crispy skin in banh mi for me. That extra crunch wins it for me. 35 day konbu dry aged wagyu please.

Oh yeah, that would be awsome too - but there are many different varieties of "banh mi" for the meat. :) Yes, you could brine pork belly for a while, then soud-vide it, finishing it off by a quick deep fry to get the skin to bubble and crisp up. One "viet" ingredient I love is "red boat salt" (which you can google). Same company that makes the Red Boat fish sauce (a premium fish-sauce), which I use for my viet food.
