Ingredients for 2 chocolate cakes (20 cm each) :
5 Egg yolks or 2 medium-sized eggs
a pinch of salt
8 g vanilla sugar
300 g of sugar
250 ml milk (room temperature)
50 g melted butter
50 g of melted dark chocolate
1 tsp baking soda (not heaped)
1 tsp vinegar 5-9%
Chocolate cakes are baked for about 45-30 minutes at 175 degrees Celsius upper-lower heat without convection on the middle rail until they are ready, and check with a wooden stick to keep it dry and clean
Ingredients for the cream (2 layers):
150 ml cold whipped cream (min. 30%)
16 g vanilla sugar
300 g cold cream cheese
12 Oreo Cookies
INGREDIENTS for the middle layer of mousse:
150 ml of cold boiled water (for gelatin)
5 Sheets of gelatin (or 8-9 g of ground gelatin)
150 ml whipped cream
16 g vanilla sugar
500 g of curd (40%) or ricotta
120 g of sweetened condensed milk
8 Oreo Cookies
For decoration:
100 g of snake cream
8 g vanilla sugar
4 g cream stiff
8 Oreo Cookies
