Perfect! My mom does not eat decent food (junk snacks) but she loves my cheese stuffed shells. The stores were out of the jumbo shells so I was forced to get manicotti shells. This would be a great way to add veggies into my mom's diet. I never thought to add broccoli into the cheese mixture. So simple. Thank you Chef John for you just being you.

I experienced the same jumbo shells issue. The shelves were bare lol... So weird. Just wanted you to know you're not alone 😊✌

@@1970boobear It was weird. I've never seen them empty on the shelves at 3 stores like that before. It's not a common pasta people use to make meals with on a regular basis. It was crazy. LOL

I was hesitant at first about your soupy tomato sauce and then remembered every time I've ever made manicotti it always soaks up the sauce until it's dryer than anything. Seeing how it looked perfect at the end shows that was the right decision to make. I'll be doing that the very next time I make some manicotti!

Thank you for using the stems! I hate videos where they are thrown away. I usually slice them thinly & freeze them (raw) for veggie soup. After freezing, they really break down when cooked.

My mother would make her own manicotti pasta by using egg crepes and roll them around the cheese filling which included some dried sweet mint. Delicious 😋😋😋😋😋

New subscriber here. I made this tonight, my first attempt at a Chef John recipe. And it’s delicious! My Italian husband is raving about it, said he had never heard of adding broccoli to manicotti but he loves it. I confess I doubted the instructions every step of the way (seemed like way too much broccoli, not enough ricotta, shells won’t cook all the way through, not enough seasoning, etc.) but I followed every step as stated and it was perfect! The broccoli was not overwhelming, the shells cooked to a perfect al denti, and the taste was phenomenal. My big dilemma now is which Chef John recipe to try next!

I few years ago I got a late night craving for something I had never tried before, ( sounds weird but its true) I knew I wanted to make some Mussels. I had never cooked mussels before, I looked up recipes and came across Chef Johns Drunken Mussels. I made them the next day, they were AMAZING!!!! I'm at that stage myself, I even will generally gravitate towards trying vegan food (not imitation meat vegan food that is always crap, but food that just happens to be vegan) instead of food with meat and I'm always blown away by how good they are. That said I still will fuck up a steak I just broadened my horizons.

Hello from Sacramento CA. I used to work in a Italian restaurant in the kitchen and this is my daughter most requested meal when she comes for a visit. We used fresh egg role wraps no stuffing tubes. And made huge manicotti.

Very clever, I will be trying once I am able to find Manicotti shells, I am not sure about other parts of the country but manicotti shells are as rare as hen teeth in the greater Tampa area.

You could have trimmed the tubes down a bit to make them fit as well if you wanted. Then shredded the leftovers in some of the leftover sauce with more sausage as a quick snack.

I've been going crazy over manicotti lately. First I made Mom's original recipe which is a classic. And then started playing with variations for pasta night because my local grocery was clearancing manicotti shells at .50 cents a box and I bought them all. Next I just added fried eggplant as a layer in the bottom. Then I replaced the spinach with sauteed portabello mushroom with porcini and topping with scamorza and prosciutto, and then did one stuffed with sausage and peppers in the cheese mixture and provel cheese on top, then did a vegetarian one in marinara sauce with tofu in the cheese mixture with copious amounts of basil and roasted garlic. So many options to play with.

I totally call mine the lasagne dish! I really like the idea of adding more water to the sauce. I will be trying that next time. Sometimes, mine feel underdone as the sauce cooks away.

I think that is one of the yummiest meals I have seen for a while...., 100% on the menu for next week if I can buy the pasta and cheese. (Pasta is like gold in our shops here in Australia..., along with cheese.)

Looks delicious! I plan to make a lazy version of this with the methods in your Baked Ziti recipe -- our family doesn't even bake it any more, we serve it directly from the pot and sprinkle cheese on top on our plates! It's a fantastic 1-pot recipe!!! 😄

Manicotti are egg crepes, pan cooked, and then rolled and stuffed and baked. This is tube shaped stuffed shells.

Your recipe sounds great, but my Sicilian mother never used pasta shells in her manicotti. She taught me to make a thin crape. They literally would melt in your mouth.

If you run those fresh blanched and cooled broccoli florettes and stems through a salad spinner - they will come out nice and dry - a little trial and error and a little shake uh shake uh will be necessary while in the spinner FWIW 😍

Here's one that blew me away with a cheese blend. Ricotta, mozzarella, and parmesan...yes! But substitute about a quarter of the ricotta (which can get dry and mealy) with cottage cheese. And I REALLY don't like cottage cheese! But its wonderful and moist....and you'd never know it was there (just like the anchovy I minced into the sauce).

Hah, yes! Thank you Chef for pointing out what I've been thinking for years -- food processors take much longer to clean than a knife. Kind of negates the "speediness" of using them.

Hello Chef, will it not be simpler to stuff them before cooking them and cook them in the oven with the sauce, like you do with lasagne sheets ?

Lasagna has to be boiled before it gets layered in the pan and baked in the oven, unless you buy "no-bake" lasagna sheets.

@@JamieDallas You can actually do the no boil first thing with regular lasagna noodles. Just have to add a little extra water and sauce.

@@JamieDallas I'm using Barilla or De Cecco lasagna sheets and they are not labelled as "pre-cooked" or "No-bake". Cooking time is 20 to 25min in sauce.

I've got to ask...what exactly is the difference between manicotti and cannelloni? In restaurants, it seems cannelloni most often has a veal filling, but both are tube pastas so I'm not sure why there's so much of difference that it needs a whole different name?
