Tripe stew
Ingredients:
- 700 gr. of tripe.
- 250 gr. of bacon.
- 1 red chorizo.
- 1/2 onion.
- 1/2 red bell pepper.
- 200 gr. chickpeas (1 can).
- 200 gr. of kidney bean (1 can).
- 400 gr. canned tomatoes (1 can).
- 700 cm3. of meat broth.
Required amount of:
.- Salt and pepper.
.- Oil.
preparation:
Boil the tripe in plenty of water for 1 hour. Let cool, clean excess fat and cut into cubes.
Cut the bacon and chorizo into cubes or strips.
Cut the onion and bell pepper into brunoise.
Heat oil in a pot and sauté the vegetables together with the salt and pepper for 5 minutes.
Add the bacon, the chorizo and stir for another 5 minutes.
After this time, add the tripe.
After 10 minutes, add the tomato and break them with the spoon.
Add the broth and cook over low heat for 1 hour.
15 minutes before serving, add the legumes (they must be rinsed and drained).
Important
The legumes used in this recipe are canned. They are already cooked.
In case of using dried legumes, it is necessary to soak them in water for several hours and then boil them.
