Hayagreeva Maddi is a sweet recipe popular among Madhwa Brahmins and often served as prasadam in Udupi Mutt and Raghavendra temple. It is easy to prepare yet tasty with the goodness of Dal, Ghee, Dry Fruits, Poppy Seeds, and Coconut.

Ingredients:
Bengal Gram or Kadlebele - 1 Cup
Water - 3 Cups
Powdered Jaggery - 1 and 1/4 Cup
Ghee or Clarified Butter - 1/4 Cup
Grated Dry Coconut or Desiccated Coconut - 1/4 Cup
Broken Cashew Nuts - 15-20
Raisins - 10-15
Poppy Seeds / Gasgase - 2 Tbsp
Cardamom Powder - 1 tsp
Method:
1. Add 1 Cup Bengal Gram or Kadalebele to the cooker. Wash them in water 2-3 times.
2. For 1 Cup Bengal Gram, add 3 Cups of water and close the lid. Allow cooking until you hear 5-6 whistles. Bengal Gram should become slightly soft, but it should not be mashed or mushy. Keep aside.
3. Add 1/4 cup grated Dry Coconut or Copra to a pan. Roast in medium flame for 5 minutes. Roast till you can smell the roasted aroma from Dry Coconut and then switch off the flame. Transfer to a plate and allow to cool completely.
4. Add 1 Tbsp Ghee to the pan. Add 15-20 Cashew Nuts and roast the same. Once they turn golden in color, remove them to a bowl.
5. To the same pan with Ghee, add 15-20 Raisins and roast the same. Transfer the roasted Raisins to another bowl.
6. Add 2 Tbsp Poppy Seeds and roast in Ghee. Roast for just 2-3 minutes. Once you smell of roasted aroma arrives from the Poppy Seeds, remove it immediately and transfer it to a bowl.
7. Add cooked Bengal Gram to a big pan.
8. Add 1 and 1/4 Cup Powdered Jaggery. Mix the ingredients while cooking. Once Jaggery melts, the mixture turns watery. Allow to cook while you keep mixing the ingredients. While cooking, the Dal will absorb the Jaggery and water and turn thick.
9. Mix continuously to avoid the mixture sticking to the bottom of the pan while it is turning thick. Dal will absorb water and the mixture will turn thick.
10. Add 2 Tbsp Ghee and mix well.
11. Once the Ghee is absorbed, add roasted Dry Coconut, Roasted Cashew Nuts, and Raisins and mix well.
12. Now add Ghee roasted Poppy Seeds and mix well. Add 1 tsp Cardamom Powder and mix well.
13. Once the Hayagreeva turns thick switch off the flame. Quality cooking wares that I love and recommend. Many of these I use every day in my kitchen and in the videos as well. Thank you.
