VANILLA CUSTARD SLICES - how to make step by step - easy dessert

VANILLA SLICE (Kremsnita)
-2 sheets puff pastry
-2 x 600ml thickening cream
-1 vanilla instant pudding (pudding that - doesn't need cooking)
-1cm long strip of gelatine
-vanilla paste or vanilla extract
PUFF PASTRY:
1.Place tawed sheet of puff pastry on a baking tray covered with baking paper
2. Cut puff pastry into nice squares or rectangular shapes.
3. Make two identical trays as you will need top and bottom sheets
4. Bake in preheated oven for around 15mins/ 200c or until light golden brown
VANILLA CREAM FILLING:
1. Take a little container and pour in enough cold water to cover and place 1cm strip of gelatine in it to soften up.
2. Take thickening cream and pour aside around 50ml of it for later use.
3. Use electric hand mixer and medium bowl.
4. Combine 1 x 550ml thickening cream and vanilla instant pudding. Mix together until the filling thickens up.
5. Place the cup with the small amount of thickening cream into the microwave and warm up for around 15 seconds. Then remove the gelatine from the water. Add the gelatine to the warm cream.
6. Stir gelatine mixture well so no clumps appear.
7. Start mixing the vanilla cream again and slowly pour in the gelatine mixture. Stop when the vanilla cream filling gets nice and thick.
8. Place in the fridge.
THICKENING CREAM :
1. Mix 1x 600ml thickening cream in a separate bowl.
2. Add vanilla paste and start mixing until it gets nice and thick .
DO NOT OVERMIX OR YOU WILL GET BUTTER !
PLACING TOGETHER:
1. Place puff pastry squares on the bottom of the serving tray next to each other.
2. Top up with vanilla cream filling and smoothen
3. Add second layer of thickening cream
4. Cover with puff pastry squares
5. Sprinkle with icing sugar and keep it in the fridge for a few hours.
6. Serve with tea or coffee
