If there's one quintessential heimish comfort food that spans trends and generations, it's chopped liver. No one makes it quite like bubby and her countertop meat grinder, but Yussi from @snapskosher comes as close as you can get! Glass of cognac and platter of kichel suggested but not mandatory.

A tip for the chopped liver, when you mix the liver with the eggs and the fried onion add a little glass of brandy or liqueur that gives it a stunning taste

I can't drink but my mum sometimes added a bit of Drambuie no-one knew where that was coming from; also, she used a food processor it was SO smooth and definitely caramalized the onions. It's actually so simple and brilliant. I'm not into force-fed goose liver which makes me shudder but I don't feel guilty once in a while this stuff is amazing on dark sourdough rye ... wonderful memories.

I watched your video yesterday and went home last night to make chopped liver. It was spectacular! And I can't believe how simple and quick it is. It took me under an hour to make two and a half pounds of it from start to finish.

My unbelievably great cook grandmother would treat up to this treat for Shabbat but never as much as I wanted! It is much better and tastier than what it sounds like! Try it!! You will love it!!

What kind of liver did you use beef or chicken ? looks delicious

Needs shallots, scallions, horseradish & crumbled matzoh. HARD cook the livers in schmaltz & sweet white wine. Don't mash the eggs, chop them. Texture should resemble a coarse pâté de campagne.

Chopped liver is not cooked, raw with Chopped onions, garlic, parsley, salt, pepper.

It's because Paul used vegetable oil, rather than schmaltz, as well as too much of it. It never quite firms up when chilled!

You should be cooking the onions in chicken fat. Oy vey, cooking in vegetable oil is like eating bacon - tastes good, but it's not, like, kosher - or, in this case, not good for you.

There is only raw liver where i live, how can I precook it? Can that be done on a pan?

According to Jewish law, it is forbidden to eat liver before it is roasted on the fire, because the liver is full of blood and if you fry it before roasting, all the blood will remain inside

That being said, if you want to use fresh liver, you can pan fry before using - look for a video of Yehuda Sichel from Abe Fisher restaurant making chopped liver on youtube.

You need to redo this video from scratch. Do this for people all over the world that can't get broiled chicken livers. Show us how to broil them FFS. Make it from scratch.

Agreed. My Mom was born ten decades ago, and I always remember her grilling the livers when she made chopliver Aso when I worked in the Kosher butcher 1984 we soaked and salted and roasted everything from the carcass for the deli counter in the same small store around the corner from the house where we always lived in Long Island

so the ignoramus is starting with pre-broiled liver there are very few places you can buy this outside of a few densely jewish neighborhoods
