Dr sir really i put the cooked rice after coming to room temperature pour water and keep it in fridge overnight and the next day i completely remove the water and heat for some time to avoid chillness and prepare curd rice (buttermilk) and for breakfast i am eating this curd rice for past one month my postprandial sugar level now comes to 140-150 previously it was above 200

Could this be due to resistant starch? Even if potatoes can be kept in fridge after boiling to make the starch resistant

Rice is ok as what you said , doctor , but in idli , thosai, arisiputtu in this also we use rice as basic ingredient , and people mostly prefer only these items to eat in home as well as in hotels. Is it possible to cultivate low calorie rice and wheat ? So that calories are reduced in the starting point itself.
