The great thing about breakfast skillet recipes is that the additions and/or substitutions you can make are practically limitless. Potatoes > Whatever you got. Meat > Whatever you got. Veggies > Whatever you got. Cheese > Whatever you got. Mix up just about anything at all in a skillet with eggs and it's pretty hard to go wrong.

Dave, great recipe, yes on us & the girls, a few things, we like to use russett or yukon gold taters( we par boil / simmer for 4-5 minutes , dry well in a tea towel & then add for frying to get a good crust , but tender on the inside , the red taters are a little to waxy , but great for tater salad) & are great fried in hog juice ( bacon fat) for breakfast, also we have sausage in pork links or 1 lb. rolls cut in 1/3inch slices, the yard bird scrambled liquid chickens are great in this dish , wife & i going to have coffee , girls want orange juice & milk( no pulp in the o.j. , they say it taste like there are feathers in it, lol) homemade biscuits with butter & honey & yellow corn meal grits on the side. Had some time to post on a Sunday, keep your stick on the ice pal , btw , the name grits came about as the dried corn was crushed at a "grist" mill , but when you say grist it sounds like grits so folks started calling them grits here in the south.
@TheCooknShare

Hey Steve. Hope all is well. Yes, it was a good breakfast. I'm sure all of you would enjoy it. Love the idea of the taters. Always count on you for great tips. Never thought of the yard bird concept. Watkins in Plum City Wisconsin $2.89/ pound when you buy a hog but they charge $1.00/pound more for their brats. The brats are awesome but it seems like it takes longer to make the bacon. I don't know but $2.89 for homemade bacon sounds good. I only have 4 pounds bacon left from the spring hog sale. I can get roasts at the local store for $2.39 but brats, bacon and good pork chops cost way more so I think it's a break even kinda thing.
