Nobody knows what will happen in life.
May some people change their life a lot tomorrow.
The owner of the Yatai shop, "Maruyoshi", was a cook when he was young.
He did not expect that he would have his own business at that time.
The life plan he had choice was right or wrong, either way, he is very strong to progress moving forward.
-- Life is fun --

I have to give a thumbs up and leave a comment. This is truly inspirational to many folks. Imagine how much harder and challenge he has to take and endure when the weather is unsettle. Very hot day. Very cold day. Very rainy and windy day. Any unpleasant outdoor conditions can make him off the day or take on the challenge.

*I feel him. we have a store that opens at 3 am. we go home at around 7pm. then sleep at 8. we rarely get breaks. we barely take breaks because the rent goes on even on holidays. the only good is the payout. but the toll on the body is extensive.*

You have to pay rent for a permanent shop. The business has its ups and downs. Some days they are really busy, others they barely have anyone. I am pretty sure covid has hit these yatai bars hard

In Japan, water is cheap (sometimes free) and freely available, and electricity is easy to use. Liquor can be delivered directly to your stall by a liquor store, making it easy to operate a stall-style business

It definitely is hard living. Reminds me of Food trucks. But this is a level harder as you have to set up everything and not just the cart but the extensions of it to make it look like a mini kitchen. And then there is the worry of whether you will have customers actually paying and eating on your stall. One thing is for sure is that. Its best to be able to set up to highly congested area as you are more visible thus can easily/might be able to entice people to eat at your stall. Ofcourse having your own place in a building is good as you do not have to set up your kit. But other worries comes to it. Like you have to pay rent for the place if you do not own it. and most of all, depending on where your place is located, it might be hard to get customers to go there just to eat. Specially if its an isolated far away place. Definitely would have to have very tasty food to make people go to it. And then making sure you got the advertising for it.

It's not that hard to set up... he actually take so much time to not waste too much energy being ineffective. In South America you have to bring everything at the same time and have partners to help you set up because people steal your equipment if you leave it alone, that doesn't happen in Japan, like ever.

I recently discovered your channel and it has very interesting content. The Japanese government should help these masters to have permanent place such as a restaurant or a semi permanent structure like a newstand. Having a structure like a newsstand is alot of help they only come prepare and open for buisness. This is too much work for the cook. Just 3 to 4 hours open and pack all up. Or help them get a food truck.
