Nice demo for handling and cooking pork belly. There are so many recipes online for braising pork belly. This demo is thorough, and the dish looks delicious. The home cook may decide to take a few shortcuts (such as reusing the oil, etc). I don't think it will hurt anything. This podcast covers all the basics of pork belly cooking. Nice! char the pork skin, then wash the pork and use the knife to scrape the skin clean. than cut the pork into cubes. put the pork into cold water, add ginger and green onion, bring it to boil. wash the pork clean in warm water. cut 2 whole garlics into cubes, then sauter the garlic cubes in hot oil until golden. then strain out the garlics. add cold oil to a hot wok, then stir fry the pork belly cubes, keep stirring until the belly renders out more oil and looks golden. strain out the pork cubes. sauter crystal sugar until it melts and looks redish brown. add pork belly to the wok to combine the melted sugar and the pork, then add bay leaves, star anise and cinnamon, don't add too much cinnamon. add boiling water, bring it to a boil under medium fire, add soy sauce and salt. cover and boil on medium/low for 20 min, then take out star anise, cinnamon and bay leaves. keep cooking without the lid, keep stirring and add the fried garlic back into the pot. @@DikkeKoelie
