Zucchini Relish- (Ball approved)
12 C shredded zucchini (5-6 large zucchini and a few yellow squashes are fine to get to 12C)
5 C chopped onion (SMALL-FOOD PROCESSOR)
2 sweet bell peppers chopped
5 Tbsp canning salt
MIX ALL TOGETHER AND LET IT SIT IN THE REGRIDGER FOR AT LEAST 12 HOURS.
ONCE YOU START THE NEXT DAY, RINSE REALLY WELL AND GET AS MUCH WATER OUT AS YOU CAN. SET ASIDE! AND START BRINE
BRINE: MEDIUM-HIGH HEAT
8 C white vinegar
1 tsp nutmeg
1 tsp mustard powder
1 1/2 tsp turmeric
3 tsp celery seed
1 tsp pepper

8 C sugar
2 Tbsp cornstarch
****MIX YOUR CORNSTARCH AND SUGAR TOGETHER AND IT WILL NOT BE LUMPY!!
Fill Jars to a ½-inch head-space, then add Brine and de-bubble well. Clean the rims of jars really well with white vinegar, place lids finger tight, and water bath can it for 15 minutes.
1/2-inch headspace, 15-minute water bath ♥
