Honestly Sushi in Japan and Sushi in the US are completely different so it’s not even competitive. Japanese Sushi focus on the taste of the materials, like any kinds of fish have to be so fresh and the chef wants you to taste the good quality of fish itself. American Sushi are more like they put lots of strong flavor of the sauce and use other seasoning on Sushi, kind of killing the smell of fish and its flavor. As a Japanese I like both tho tbh those two are way too different imo.
