I don't remember it being covered completely with graham crackers. It was more like a sprinkle of it. I also remember the crust had a buttery taste. When I was pregnant I would try to go once a week for cake.

I wanted to say I DO really appreciate this recipe posted because I’d never seen it and it’s a part of nostalgic history. The one I found I believe was from the 50’s or 60’s. They changed the recipe up in the 1970s and pulled out the water, if you can find that recipe it's the one you're looking for . This one is from the 1950s/60s back of the oatmeal cannister.

I clicked on this because I'm sixty and love enchiladas and pretty black-haired women. Noboby who likes enchiladas will want flour tortillas. And no offense, but beans don't belong, either. @@MaryeAudet-RestlessChipotle I learned to heat my flour Tortilla's in a pan with a little oil, on both sides, but only for a few seconds, then drain them on a paper towel before using them in a dish like this. My husband doesn't want corm tortilla's, so I had to figure out a way to make this work without having a casserole filled with gummy flour tortilla's.

I have a family member who is diabetic. However, it looks like this is a pudding pie with the marshmallow added. Am I correct. Seems like I could leave the marshmallow out, make my sugar free vanilla pudding recipe. I know we give our diabetics at work nilla wafers. And just use a tiny bit of my favorite natural diabetic sweetener in the whipped cream. I am wondering if there is something I missed. But I think it might work. Or is a general pudding going to be too thin. Because I imagine the marshmallow would help thicken the filling.

So if you're going to do that I'd suggest switching to this no-bake pineapple pie that has cream cheese. it would be much easier to make diabetic friendly. You'd use sweetener in place of the sugar and sugar free cool whip. kzfaq.info/get/bejne/aJmmeKVjq9_XaIE.html

There are both salt and sugar in these in the "normal" amounts, however it's always good to go by your own tastes. :)

This is like the 6-cup salad I know from my childhood: equal parts sour cream, mandarin oranges, mini-marshmallows, canned pineapple bits, shredded cocoanut, pecans. SO CRAZY GOOD. aka "Ambrosia Salad" I think?

You can add 1 teaspoon of cream of tartar or a little icing sugar will help the cream stay a couple of days without breaking down.
