Hello Lucie, First cook the chicken in the tomato paste for 10 minutes or until it boils. Then add potatoes, carrots and seasoning and cook for 15 minutes or until the potatoes and carrots soften. Lastly, add yellow onions and green peas. Bring it back to boil, that will be another 5 minutes. Total cook time would be around 35 minutes. Hope the information helps! Fun fact I am Teochew Chinese Vietnamese. This dish came from Chinese immigrants coming to Vietnam. A lot of people I know called this Vietnamese food but it’s origins are muddled because of our peoples diaspora. I hope we can preserve that.

Thank you very much! Do you know if some recipes only use the leaves. I have a liking for less processed, less artificial preservatives, and all natural ingredients. I have been looking for the pandan leaves. Now I'll look in the freezer. Thank you. I learned about pandan after 3 color drink in restaurants. I wish some of these other recipes were on the menu at Vietnamese restaurants..I think I will try to make them.

Thank you! You can find the Annatto seeds at the Asian Supermarkets. Then you just cook the seed with cooking oil. Just put the seed in oil and bring it to boil, you will get the beautiful color oil to add to the meat. If you can’t find Annatto seeds, just use regular cooking oil. Enjoy!

For this recipe, it was not intended for the ribs to be falling off the bones. But if you don’t like that layer of skin, you can remove that before marinate the ribs. 💕
