Been make it for years. If you smoke it to 160 then it is fully cooked and you can eat it as is if you don’t feel like frying it first. Works great on sandwiches that way also.

Hi again! The per serving sugar amount is very low at that number (30g in the recipe). You could, if you'd like use 1/10 of a gram of stevia for the recipe.
